Italian Dressing Mix

Great mix! Did not have parsley but it turned out fine. Substituted Splenda for white sugar and olive oil for canola oil. I did not use as much salt; maybe under a tablespoon. I also used garlic powder and celery seed to further reduce the salt. It was a hit over my pasta salad!

Apple Butter Pork Loin

I have prepared this recipe twice so far. The first time I made it I didn't have apple juice so I used unsweetened apple sauce (about 1/2 cup) and about 1 1/2 cups of water. Great Christmas and New Year's Eve recipe!

Six Can Chicken Tortilla Soup

I really liked this recipe. Yes, fresh chicken would have been better but the canned did good in a pinch. Hubby wasn't too impressed with the flavor. He said it was bland. Next time, I will use HOT Rotel instead of mild, I guess. I should have rinsed the beans, but recipe doesn't even call for draining them. My additions to this recipe were; saffron rice, fresh avacado (chopped with fresh lime juice), (just a touch of) fresh cilatro, fresh chopped green onions and shreaded Monterey Jack cheese. I topped already dished out soup with the above for an attractive dish.
