Fudgy Chocolate Cream Pie

This was excellent! I added extra 2 tsp. cornstarch and 1/2 c. milk to make enough to fill pie. Another reviewer said it was very thick. So by using just a bit more cornstarch and extra milk it was perfect and cut really neat slices. Cornstarch is unique in the way that when you bring to a hard boil; than boil for 1 min longer the filling is perfect. If you overcook it, it will go back to thin!!!I made this for my coffee group and they gave it 10 stars!

Apricot Brandy Pound Cake I

Really moist cake! Was loved by family and friends. I bought it as a dish to pass. I used burnt butter frosting from this sight. I changed it slightly. Instead of using milk to thin the frosting I used part apricot brandy and part hot water and put on warm cake after removing from pan. This frosting spreads much better on warm cake.

Candied Sweet Potatoes

These were delicious! I did as someone suggested to cut the butter. I used only 1/2 cup butter and cut the sugar by 1/2. I also made a bit of homemade applesauce (1/2 cup)and put it in the butter, sugar, marshmellow mixture. I chopped the partially cooked patatoes into cubes. I did mash a few pieces in the sauce as I cooked it. I than stirred in the remaining put in dish and bake as directed. I just sprinkled a few marshmellows on top. See photo I sent in.

Cream Puff Cake

Fabulous! Really good. It was literally devoured by all! I made sure I cooked the "crust" till really nice and brown. This made it quite firm texture and not wet inside. My friends were still talking about today (5 days later) I loved all the credit!

Fresh Apple Cake II

This is a wonderful recipe. The only thing different was I added butter sauce and omitted nuts. I used real whip cream. My favorite of the apple cakes is the raw apple cake recipe from this sight. I made both of these late fall and will probably try a few more apple cakes as that, pies and chocolate deserts are my favorite things to bake. Well; I do love to bake cookies and cheese cake too!(actually any desert)

Pumpkin Dessert

Excellent. For those who don't want to make a pie crust this would be great for Thanksgiving. I served with whipped cream & was delicious. Pumpkin was firm to slice...see my photo, but still pie perfect filling. The only thing different; I used spices from Libby's Pumpkin pie recipe & mixed the nuts with the topping just before sprinkling on top & pressed in lightly. This way the nuts stick a bit better & become incorporated into the topping, with less falling away when cutting.

Rhubarb and Strawberry Pie

Awsome! I only made 1 change. I read in another recipe how they stirred 1 beaten egg into the sugar/flour mixture. I just wanted to try that and it was beyond excellent! The pie was firm and jelled nicely and cut beautifully. Sorry I didn't take a photo of a cut slice because it was so perfect.

No Bake Chocolate Oat Bars

Deee-licious! Quick and easy. If you cook the oatmeal for a few minutes the butter is absorbed. I left it on low with a cover for 5 minutes. They were gobbled up in less than an hour. My coffee group loved them. I sitting at my computer making recipe copies for my friends.

Frosted Banana Bars

VERY, Very tastey bars. Kind of cake like; but very moist and dense. The only thing I did different was the frosting. I'm not a cream cheese frosting fan! I used the frosting recipe from the White Texas Sheet Cake recipe from this sight. I put it on the bars while hot as directed on the "White Texas" recipe. Sprinkled some chopped pecans on top, too! I used lemon juice to knock down the sweetness in the frosting. Banana cake is always great with the tang of lemon. By the way it only took 20 min. to bake. Any more time and I think it would have made them dry. Watch carefully as in doesn't take long to bake because the pan is shallow.

Lemon Poke Cake II

LUSCIOUS!!! I did one thing a bit differentthis time. I used 1/2 the amount of lemon with fresh lemon.(didn't have enough of just juice) I have made this several times the original way and just loved the taste using fresh lemon!I think next time I will use all fresh lemon. It was so fresh tasting.

Luscious Lemon Cake

This was an excellent cake. To the cake; I added the rind of 1/2 a lemon. It was extremely moist. Fresh rind always keeps a cake moist. I made it in 2 9" layers and baked them for 30 min. I didn't use the frosting as I wanted it filled between layers (I slit each to make 4 layers) with a lemon filling recipe that was quite unusual. 4oz. Cream cheese soften, 3/4 c. lemonade concentrate & 1 can sweetened condensed milk. Beat together and fold in cool whip. It was a superb choice. Used more grated rind and strawberries for finishing touches around top and base of cake.

Maryann's Upside Down Rhubarb Cake

OH MY GOSH! This was by far a great simple desert. I did use 3/4 c. whipping cream instead of 1/2 c. as called for. It was no problem. I did used 4 c. frozen rhubarb and let it drain for a about 1 hour as sugested by others. Also as suggested I cut the sugar. I used 1 3/4 c. sugar but next time I will try 1 1/2 cups. Someone said a cake mix had a store bought taste to it. I always use 1/2 milk and 1/2 water for the liquid, plus oil and eggs as specified in cake mix directions when making a cake mix. My friends never realize that it is a mix until I tell them.

Sunday's Apple Pie

Very good apple pie. I did double the apples and sugar; than put in a 10" shell. I did not double the flour,cinnamon or butter and it was great and very juicy. I like piled high apple pie. Pie making is my most favorite thing to do! I like to decorate with the extra pie dough.

Easy Apple Coffee Cake

YUMMY IN YOUR TUMMY! YES I'M SHOUTING! This was soooo good & easy! More time peeling & cutting than making the recipe. I finely chopped 1 of the apples & stirred it into the batter. I did use someones suggestion and stirred sugar and nuts into the fruit just before assembling batter and apples. If you sugar too soon; the fruit will weep and make a lot of liquid. This was moist and dense. I wanted to serve it as a dessert so I made whip cream and served it with some sliced apples as presentation. My coffee crew just loved it & I will be printing several recipes requests this afternoon!

Strawberry "SHORTCUT" Shortcake

This is the best darn dessert to make in a hurry! I made it so I could send in a photo. This is one cake I didn't have a photo in my collection. When I take this to a pot luck, I leave in the pan & frost with whip cream. Obviously I can't cut and turn over each piece like I do for at home, but it is just as tastey served this way. I always bring recipe copies, as is one of my requested recipes. I only had a butter recipe mix last night, so I used that & it was just as delicious as with a regular yellow cake mix. This is a great way to have strawberry shortcake "out of season."

Earthquake Cookies

These were really good. I followed the recipe exactly. I did add 2/3 cup mini chocolate chips as suggested by another person. There can never be too much chocolate! They were good the night I made them but excellent the next day. I baked them exactly 8 min. If this cookie is dry it's because they were baked too long. I would suggest making the day before so flavors can mellow. I stored them in a tin between layers of wax paper NOT plastic wrap or they will get too soft.

Pumpkin Cream Pie

I have made this 3 times. This time I used caramel sauce & chopped pecans on the whip cream topping around the pie edges. I also sprinkled a few pecans on my crust along with a 1 Tbsp. of caramel sauce drizzled over the pecans. It was wonderful & decadent!

Luscious Four-Layer PHILLY Pumpkin Cake

I added an extra step. I frosted cake with whip cream. I wanted it to be for a birthday cake for my coffee gang. It was gone by the end of the party. The guys all begged for a 2nd piece. I used home made caramel sauce as I find it simple to make a small amount as needed.

Coconut Cake I

I loved it. I made a mistake & reversed the sugar & sour cream amounts. Ended up using 2 c. sour cream, 1 c. sugar & the coconut. It was absolutely a delicious mistake! When I make my cake mixes I use milk instead of water & 1/2 oil & apple sauce for the oil. You can't taste the apple flavor but it makes for a very moist cake. No matter what flavor including chocolate. I buy snack cups of unsweetned apple sauce and put oil in the bottom of the correct size measure cup. example: fill 1/2 with oil & a few tablespoons of apple sauce until it reaches the top of the measure cup. The cake is best mellowing over night. Actually any cake is better done the day before. It mellows & infuses the cake with more flavor. I made the filling the night before I made cake mix, just to save time. But, I noticed that the coconut absorbed the liquid from the sour cream & was really delicious & fluffy. I will do this again next time.I also think the sugar can be cut to 3/4 cup. I love sweet & this is plenty sweet. My friends devoured the cake in no time. My coffee gang loved it. Did you know you can toast coconut in a T-Fal type pan with no oil. The coconut has plenty of oil in it. Just use a medium heat & stir constantly & the coconut will toast.
