Almond Shortbread I

These were good. I did something a bit different. I have a several mini tart pans so I pressed dough in each one and make perfect little round shortbreads.

Apple Pie III

This pie was good although I did a couple of things different. I used my own great tasting flaky crust recipe - so why try another. I also more than doubled the filling to 2 1/2 times. But used 3/4 c. sugar. I prefer a stuffed apple pie. See photo of my pie. I also cover the crust ends for 3/4 of baking time with crust covers. This way the crust stays golden. When using firmer apples like granny smith or greenings; it takes longer to get the apples tender and if the crust isn't covered the ends get too dark and left on the plate.It also doesn't look good.

Honey Chocolate Pie

Raw Apple Cake

This was pretty good but I still like my standard recipe which uses 6 cups of apples. The only thing different was I eliminated the cream cheese frosting and used whip topping.

Pineapple Cream Pie

This pie was good but not great. It was all eaten though! I did prefer to use a home baked crust. I'm not a graham cracker fan for crust. I thought I would try this as I do like cooked cream filling.

Cream Puff Cake

Fabulous! Really good. It was literally devoured by all! I made sure I cooked the "crust" till really nice and brown. This made it quite firm texture and not wet inside. My friends were still talking about today (5 days later) I loved all the credit!

Candied Sweet Potatoes

These were delicious! I did as someone suggested to cut the butter. I used only 1/2 cup butter and cut the sugar by 1/2. I also made a bit of homemade applesauce (1/2 cup)and put it in the butter, sugar, marshmellow mixture. I chopped the partially cooked patatoes into cubes. I did mash a few pieces in the sauce as I cooked it. I than stirred in the remaining put in dish and bake as directed. I just sprinkled a few marshmellows on top. See photo I sent in.

Apricot Brandy Pound Cake I

Really moist cake! Was loved by family and friends. I bought it as a dish to pass. I used burnt butter frosting from this sight. I changed it slightly. Instead of using milk to thin the frosting I used part apricot brandy and part hot water and put on warm cake after removing from pan. This frosting spreads much better on warm cake.

Baby Food Cake I

This was moist. Instead of using baby food I used canned peaches. I drained most of the liquid and put peaches in a food processor to make puree. The flavor is much more intense. For frosting beat 8oz. cream cheese, with 1 c. powder sugar and another 1c. puree peaches. Fold in 8 oz. whip topping. I split my 2 9" layers and frosted in between layers, than stacked and frosted top and sides of cake. The fosting is light and not overly sweet. It made for a really high cake. I drizzled with caramel and chopped pecans. Next time I would use almonds as peaches and almonds blend well! You can use other canned fruit like apricots.

Sunday's Apple Pie

Very good apple pie. I did double the apples and sugar; than put in a 10" shell. I did not double the flour,cinnamon or butter and it was great and very juicy. I like piled high apple pie. Pie making is my most favorite thing to do! I like to decorate with the extra pie dough.

Hummingbird Cake I

This was a delightfully different cake. It is moist and dense. I too mashed the bananas as suggested by another reviewer. I also cut oil by 1/4 cup as sugested by several others. I used a thin brown butter frosting and poured over warm cake. As it ran off the cake I kept drizzling the "run off" back on. It is a favorite frosting.

Easy Pumpkin Cream Pie

My coffee group loved this pie. This is a really good pie but I don't have room to freeze. So I did add an extra instant pudding and used only 1 cup of whip topping folded in. It was firm enough to cutand nice light chiffon texture. This pie has a mild pumpkin flavor; not like a baked pie which is intense in flavor. I didn't use pumpkin pie spice. I prefer using 1 teaspoon cinnamon, 1/4 teaspoon each nutmeg, ginger and 1/8 teaspoon cloves.

I used all brown sugar. I removed allspice as I don't care for that spice. I also cut ginger and cloves to 1/4 teaspoon each. I like the pumpkin flavor to shine. Cloves has sharpness to it. It can take away from the pumpkins delicate flavor.

Mom's Pie Crust

I admit to using shortening. I thought I had butter. I didn't. I forgot the sugar too! But it was a great mistake! This crust was so tender. I filled it with a no bake pumpkin pie from this sight. Got all rave reviews. The secret of any crust is not to handle the dough. I use a spatula to gather it together. I dump dough on a lightly floured pastry cloth and using the corners of the cloth and pull it together. I just roll dough out and aside from turning; I haven't handled the dough. The warmth of your hands make crust tough. Practice makes perfect. I make at least 2-3 pies a month!

No Bake Pumpkin Pie II

Great light flavor pumpkin pie! I actually made 6 mini pies. I melted some caramel sauce and spread it on bottom. I sprinkled a few pecans on top of the sauce. After filling; I topped with a few more chopped pecans. When I served the pies, I put on whip cream and drizzled a bit more caramel sauce. I used a fondant leaf for decorating each mini pie.

No Bake Peanut Butter Pie

Lip licking good! I did this with my favorite chocolate cookie crust. I use 1 1/2 cups crushed chocolate cookies. Mix with 6 Tablespoons melted butter. Pressed in 9" pan. Set aside while making filling. I only use 1/4 cup milk. Every thing else the same. I put halfs of a peanut butter cups pin wheel fashion (cut side down)around pie edges. When I serve I drizzle with hot fudge sauce. Each slice gets a peanut butter half.

Yummy Pumpkin Pie

This was a good pie. I did manage to find custard mix. I do prefer my favorite pumkin pie recipe. I love pumpkin so I try a lot of recipes. This was really creamy.

Chocolate Supreme Pie

This Pie is really good. I added my twist. I chose the recipe to bake because it sounded simple and I could dress it upfor company. I love the combination of caramel, chocolate and pecans! I used semi sweet chocolate chips in place of the milk chocolate to cut the sweetness. I used a homemade pie crust with 1/4 cup Carmel spread over a baked crust and 1/4 cup chopped pecans. I than put in the filling. I frosted with whip topping and drizzled another 1/4 cup caramel sauce and sprinkled 1/4 cup chopped pecans. A small serving brings a satisfied smile!

Paul's Pumpkin Bars

Smashing recipe! These are so moist. I like making the night before so the flavors mature. Used 1/2 white and 1/2 brown sugar. Used everything else as specified in recipe except for the frosting. I prefer browned butter icing. I have a favorite recipe I use. I took them to my coffee group and they were devoured in no time. NOTE: I cut cooking time by 5 minutes. Test with tooth pick.
