Bavarian Brownies

Reviewed: May 28, 2009
These were pretty good in a pinch. I used regular chocolate cake mix because that all I had and wanted to bake. An old trick my Mom taught me is to add 1 Tablespoon corn syrup to the mix. It makes a chewy brownie. I used oil as someone suggested. My brownies were a bit flatter than than usual. But they were moist. I cut back on the baking time, too.

Frosted Banana Bars

Reviewed: May 27, 2009
VERY, Very tastey bars. Kind of cake like; but very moist and dense. The only thing I did different was the frosting. I'm not a cream cheese frosting fan! I used the frosting recipe from the White Texas Sheet Cake recipe from this sight. I put it on the bars while hot as directed on the "White Texas" recipe. Sprinkled some chopped pecans on top, too! I used lemon juice to knock down the sweetness in the frosting. Banana cake is always great with the tang of lemon. By the way it only took 20 min. to bake. Any more time and I think it would have made them dry. Watch carefully as in doesn't take long to bake because the pan is shallow.

Swedish Apple Cake

Reviewed: May 21, 2009
Good. I did use a crumble topping. I wanted to use this for a coffee cake. I still prefer another recipe from this sight for apple cake. But how can you go wrong? Apples make a cake nice and moist!

No Bake Chocolate Oat Bars

Reviewed: May 6, 2009
Deee-licious! Quick and easy. If you cook the oatmeal for a few minutes the butter is absorbed. I left it on low with a cover for 5 minutes. They were gobbled up in less than an hour. My coffee group loved them. I sitting at my computer making recipe copies for my friends.

Rhubarb and Strawberry Pie

Reviewed: Apr. 26, 2009
Awsome! I only made 1 change. I read in another recipe how they stirred 1 beaten egg into the sugar/flour mixture. I just wanted to try that and it was beyond excellent! The pie was firm and jelled nicely and cut beautifully. Sorry I didn't take a photo of a cut slice because it was so perfect.

Fudgy Brownies II

Reviewed: Mar. 23, 2009
These were pretty good but not exactly what I was looking for. Time for brownies tend to be different for each oven. When the sides start to pull slightly from the pan; they are done. A tooth pick for a tester is not for brownies as they are supposed to be moist and chewy and tooth pick will be sticky!

Lemon Bars I

Reviewed: Mar. 23, 2009
Mmmm-Yummy. These were really good. I made them because it made a small pan rather than a 13 x 9 pan.(This was easier as I didn't have to cut my recipe in 1/2) I still prefer my own recipe. But this sure hit the spot and was loved by my coffee crew! It will be a keeper as it just the right size. Don't like to have leftovers! They tend to expand my jeans!!!

Golden Chocolate Chip Cookies

Reviewed: Mar. 23, 2009
These were good and chewy. I tried them because it made a small amount. They still aren't good as my Mom's used to be but they will do in a pinch! Can't find her original recipe.

Sour Cream Chocolate Frosting

Reviewed: Mar. 4, 2009
This was very good. I mixed 1/3 unsweet and the remaining semi sweet chocolate. I like a less sweet frosting. I made a regular devils food cake mix split and frosted between layers.

Chocolate Mousse Cake IV

Reviewed: Feb. 22, 2009
Mmmmmmmmmmmmm-I loved this mousse. I did chill the bowl and beaters; so the cream would beat up quick and stiff peaks. That is important. I folded 1/3 of the cream at a time into the chocolate mixture. This way it leaves no streaks. I chilled this for 20 minutes and than split the cake into 4 layers and filled and frosted. It made a wonderful 80th birthday cake.

Toffee Pie Bars

Reviewed: Feb. 17, 2009
No greasing or sticking if you use Reynolds Release Foil! I mention this 1st for people have trouble with sticking to the pan. Also I find if you bring to a boil and boil a full 3 minutes; the brown sugar butter mixture will set up perfectly. These are just as great as the soda cracker cookies in this sight. It's hard to tell the difference. But if you compare taste; the saltines bring out the toffee flavors a bit more because of the salt. I made these at Christmas time. I also made these with milk chocolate chips instead of nuts and used 1 cup of toffee bits sold along with chocolate chip section of the baking aisle. My grandson isn't a nut lover and thought these were great this way. My coffee group thought these were a great Valentine Day treat.

Soda Cracker Cookies

Reviewed: Feb. 14, 2009
These are awesome! They are more like candy than a cookie. I save a step and use Renolds release foil which needs no grease. Saves having messy hands!

Fresh Apple Cake II

Reviewed: Feb. 7, 2009
This is a wonderful recipe. The only thing different was I added butter sauce and omitted nuts. I used real whip cream. My favorite of the apple cakes is the raw apple cake recipe from this sight. I made both of these late fall and will probably try a few more apple cakes as that, pies and chocolate deserts are my favorite things to bake. Well; I do love to bake cookies and cheese cake too!(actually any desert)

Apple Pie III

Reviewed: Dec. 19, 2008
This pie was good although I did a couple of things different. I used my own great tasting flaky crust recipe - so why try another. I also more than doubled the filling to 2 1/2 times. But used 3/4 c. sugar. I prefer a stuffed apple pie. See photo of my pie. I also cover the crust ends for 3/4 of baking time with crust covers. This way the crust stays golden. When using firmer apples like granny smith or greenings; it takes longer to get the apples tender and if the crust isn't covered the ends get too dark and left on the plate. It also doesn't look good.

This was pretty good but I still like my standard recipe which uses 6 cups of apples. The only thing different was I eliminated the cream cheese frosting and used whip topping.

Pineapple Cream Pie

Reviewed: Dec. 5, 2008
This pie was good but not great. It was all eaten though! I did prefer to use a home baked crust. I'm not a graham cracker fan for crust. I thought I would try this as I do like cooked cream filling.

Cream Puff Cake

Reviewed: Dec. 5, 2008
Fabulous! Really good. It was literally devoured by all! I made sure I cooked the "crust" till really nice and brown. This made it quite firm texture and not wet inside. My friends were still talking about today (5 days later) I loved all the credit!
