Overnight Cinnamon Rolls I

I was nervous to make these but I've never made cinammon rolls before. They were SUPER easy and I followed the recipe exactly. The boyfriend practically engulfed them and I had to hide some so I would have enough to take to the neighbors! WILL MAKE AGAIN!

Tilapia Scaloppine

I followed this recipe exactly and absolutely LOVED the sauce. The only thing I need to tweak is making the FISH itself stronger in flavor. (I love really strong tasting food.) I might do a white wine/lemon juice marinade of the fish before just to add some extra zip. Otherwise it was awesome and I'll definitely make it again.

Tofu Sandwich Spread

Very nice way to incorporate tofu. I made a few changes. I used Miracle Whip Light instead of mayo to cut some of the calories and fat and I also added some paprika and mayo for added flavor. Served on toasted multi-grain brain. Yum yum!!!

Green Chile Frittata

This was so easy and actually really tasty for so few ingredients. The only changed I used was making sure I had all non-fat/low-fat ingredients and I added jalepenos. I still feel it could use a little zip to make up for using so many low fat items that I might play around with it and add some garlic or onions next time. All over a really easy, great recipe!

Twice Baked Potatoes II

Yum! Very good! I used fat free sour cream, reduced fat cheese, and the boyfriend added Bacon Bits to his. I added half a slice of Cheddar Cheese to the top of each during the last 10 minutes. SO good.

Spicy Fish Soup

We really liked this soup! I judge everything I make by the picky boyfriend and he loved it. (He isn't even a soup-lover!) I added some jalepenos and some cilantro to up the flavor but that is pretty much the only change I made. I like that it was SO easy and the fact that I could change up the meat from seafood to chicken easily depending on my mood makes it even better. For being so healthy it is so tasty! Hooray!

Chicken with Garlic, Basil, and Parsley

We really liked this! I loved the simple ingredients, which are all things I almost always have on hand. Made with the following changes: Used fresh basil. Drizzled EVOO on the top of the chicken. Used LOTS of garlic. Used a whole basil leaf under each tomato slice. Sprinkled Parmesean cheese on the top 10 minutes prior to finish. REALLY good. Really simple. The picky boyfriend really liked it. Served with Jasmine rice and green beans. For sure will make again.

Salsa Chicken

This recipe was awesome for how cheap it was and how little work I had to put into it. Even the picky boyfriend who HATES Mexican food (I know right?) went back for 2nds. I used Salsa Verde instead of regular salsa and it was delicious. Also, next time I might pound the chicken breast so they are thinner. All in all it was tender, flavorful, and CHEAP! Woo! Will definitely make again.

Shrimp Alfredo Pasta

This was pretty good but as stated by previous raters it was fairly bland. Next time we will definitly spice it up a bit perhaps with fresh garlic, basil, and using a different Alfredo sauce. Overall its simple, easy, and not bad!

Lemon Garlic Tilapia

This recipe was very mediocre. I followed the recipe exactly and found it to be really bland and I even added extra garlic. We eat tilapia a lot and for some reason our pallets didn't agree with this recipe.

Hudson's Baked Tilapia with Dill Sauce

I REALLY wanted to like this. The only reason I gave this a 3 star instead if a 2 star is because I'm pretty sure the reason I didn't like it was that I used Lousiana Style Cajun Seasoning and it had a very weird taste to it. I might make this again with a different kind of seasoning as well as putting some lemon juice on the fish before baking. The dill sauce was okay but not a fave.

This was a simple and easy dish but for us was good not GREAT. The steak sauce was a bit overpowering for us but not terrible. This wouldn't be something we would crave but might make again if short on time!

Pasta Bake

This was pretty good for such a simple dish. My boyfriend and his friend each ate two servings and we had plenty leftover. Changes I Made: Used ground turkey meat instead of beef, Mixed in some italian seasoning to the meat and pasta sauce, and put most of the cheese on top before baking. Next time I might add a few cloves of chopped garlic and maybe some red pepper flakes. Great for a quick meal!

Chile Basil Sesame Chicken

This was really tasty. The flavor wasn't TOO overpowering but definitely not bland. Changes I Made: Omitted the chile peppers and instead added a couple dashes of crushed red pepper flakes and Siracha chile sauce, Omitted fresh basil and added LOTS of dashes of dried basil (because I had no fresh). Will make again!

Chicken with Asparagus and Roasted Red Peppers

This is by far my FAVORITE new recipe. I was a little skeptical that it might be a little bland but I am SOOOO impressed. Changes I Made: 3 or 4 garlic cloves, 1 c. Chicken Broth, A pinch of red pepper flakes and using garlic salt for seasoning instead of regular salt. For being so healthy it was AWESOME. The picky boyfriend had two servings.

Artichoke Chicken

We liked this recipe a lot. Not only because it was very easy to cook but because it was a very simple tasting dish. The picky boyfriend went back for seconds and asked me to save the leftovers! (A rarity for him). CHANGES: I used 1/2 cup of fat free sour cream 1/2 cup of Miracle Whip and added a few cloves of minced garlic. I also didn't have garlic pepper so substituted garlic salt. Also, next time I think I'll either cut up the chicken into cubes or pound it thinner.

We liked this, it was really easy to make but wasn't anything special. Just something easy with minimal prep. The only difference I would make next time would be to pound my chicken thinner before breading it.

Spicy Basil Chicken

We really liked this recipe...even the SUPER picky boyfriend. I made the recipe exactly as directed with the following changes: No chili peppers but instead added 1-2 tablespoons of red pepper flakes, Added 4 cloves of garlic instead of 2, and added a touch more chili oil once the chicken was added. FOR SURE will make again.

Olive Chicken II

I really really enjoyed this recipe. I'm in love with olives and garlic and the combination of both was delicious. Changes I made: I used Greek Seasoning instead of salt to season the chicken breasts before browning. I didn't have any white wine so I used all chicken broth. I also added lots of extra chopped garlic in bigger chunks. I also wanted a thicker sauce so I added some cornstarch at the advice of others. My boyfriend hates olives so I just pulled the chicken breasts out of the broth before adding the cornstarch and he loved the chicken. Will for sure make again.

Garlic Chicken Fried Chicken

Hi, this is my first time reviewing a recipe and I must say this is the ONLY dish that my boyfriend and I have agreed on in TWO years. We have very different pallets and I like things more flavorful and he likes this bland. However, this was the perfect blend for both of us. The only thing I did different was add some fresh garlic and a tsp. of cayenne. Served it with some mashed potatoes and chicken gravy. Will FOR SURE be making it again!
