Karyn's Cream of Crab Soup

Reviewed: Mar. 10, 2014
Delicious! I made this for my family of 5 and we devoured it. Very rich, very creamy and the instructions are perfect. I used 4 cans crab meat and half the old bay. I will make this again.

Downeast Maine Pumpkin Bread

Reviewed: Oct. 10, 2013
This is perfection in every bite. The crust is just the right amount of crispy and the inside is moist and delicious. I used all the ingredients in their listed measurements. However, I didn't have enough white sugar so I added brown sugar and evaporated cane sugar to make up the difference. I will definitely be making this again. This is my new all-time favorite pumpkin bread.

Alfredo Sauce

Reviewed: Aug. 20, 2013
WOW! This sauce is delicious! I made it at the request of my 8-yr old who discovered alfredo sauce at a restaurant. I minced the garlic and added it to the butter for a minute or two before adding the cream. I will make this again.

Old Fashioned Mac and Cheese

Reviewed: Jul. 28, 2013
I made this for the first time. I was in a rush so I just added the cheese to the milk/flour mixture, let it melt, and then stirred in the pasta. The finished product was delicious. I will make this again, although maybe with a little less milk if I don't have time to bake again. It probably firms up in the oven, but the way I had to serve it, it was a little runny. A slotted spoon worked great and everyone loved it.

The flavor was alright but they are too cake-like.

Caramels

Reviewed: Dec. 12, 2012
I made these without a candy thermometer and I overcooked them. Some of the reviews stated that the mixture would double in size and I kept waiting for that to happen. Even when it got to the hardball stage (according to a drop of mixture in cold water), I kept stirring waiting for it to double. It never did and I finally poured it out on the cookie sheet. It was too hard for caramel but did make a nice caramel candy. I am giving it 5 stars because the taste is wonderful and I have no double this would have turned out perfectly with a candy thermometer.

Chocolate Pecan Pie III

Reviewed: Nov. 15, 2012
This is the best tasting chocolate pecan pie recipe I have made. I would suggest whisking the sugar/cocoa/butter mixture over medium/low heat until it reaches close to a boil. This thickens the mixture so it is not so soupy. Then temper your eggs by adding a little of the mixture to the beaten eggs until you feel comfortable that the eggs aren't going to "cook" when you pour them into the mixture. Be sure to let the mixture cool a bit also. I added 2 cups of chopped pecans and made two regular pies (used store bought pie crusts) with this. I'll definitely make again. Thanks for the recipe!

Laura's Quick Slow Cooker Turkey Chili

Reviewed: Oct. 30, 2012
Excellent! I did modify a bit for what I had on hand, but the results were wonderful. I used a can of tomato sauce and a can of crushed tomatoes in place of the tomato soup. Only 1 can of black beans, cayenne instead of red pepper flakes, omitted allspice, and added a dash of turbinado sugar to cut the acidity. Also, didn't use any oil. This was delicious and I will make again. Served with shredded cheddar, onions and corn chips.

Chocolate-Zucchini Cupcakes

Reviewed: Aug. 24, 2012
This is a great adult cake. I wouldn't make this for a group of kids because the zucchini pieces are very visible when you slice it and they look a little strange. Overall, the cake is not too sweet and is delicious without frosting. I made it exactly as written but at the end, I split the batter into two and added 1/2 tsp vanilla to one. I baked them separately and the one with vanilla had a richer flavor. My kids enjoyed it but I can see where pickier kids will turn away bc of the zucchini. You could always leave it out.

Homemade Steak Sauce

Reviewed: Jul. 16, 2012
This steak sauce is excellent! We mix it with our hamburger patties and baste the patties while cooking. Top with cheddar cheese and onions... you don't even need a bun. I make 4 batches at a time and bottle it to have on hand.

Waldorf Salad II

Reviewed: Jul. 3, 2012
I made this for the first time and it was delicious. I tossed the apples in the lemon juice and cut the sugar to 1 tsp. Used red grapes instead of raisins. Next time I will cut the apples last to prevent browning.

Meatball Nirvana

Reviewed: Jun. 21, 2012
These are delicious! I used oatmeal instead of the bread crumbs because I don't care for the bread crumb texture. Also, line your baking sheet with parchment paper so the meatballs don't stick. Thanks for sharing your recipe.

Oh my goodness, this is so good! My parents and family raved about it with my mom saying it was restaurant-quality. It's the dressing that makes it. I think anything you put in this is going to taste wonderful.

White Bean Chicken Chili

Reviewed: Mar. 28, 2012
My family and I really enjoy this recipe. I usually use a jar of tomatillo salsa and omit the can of green chiles since they're already in the salsa. I puree the beans so my kids don't know they're in there. I serve it with tortilla chips and monterrey jack cheese. Yum!
