I am a mother of a 12 year old girl and a 6 year old boy. I have been married for 13 years and I enjoy spending time with my family and volunteering at my children's school.
My favorite things to cook
I love making anything that gets rave reviews, but my favorite things to cook are roasted chicken with all the fixin's, soups (chicken, hamburger, french onion), and I love to bake all kinds of goodies.
My favorite family cooking traditions
When roasting a chicken or turkey, pour boiling water over bird before putting in the oven. It scalds the skin and seals in juices. Also, add a couple tablespoons of ginger to stuffing to prevent indigestion.
My cooking triumphs
Baking various goodies - and even homemade bars of soap, to sell at my kids' school bake sale, and having all of my goodies sell within the first hour of the sale. Learning that I can make a pumpkin pie that puts my Mom's pumpkin pie to shame (my Mom could have started her own bakery - her baking was so delicious)!
My cooking tragedies
Baking frog's legs with so much garlic that they were unedible. What was I thinking?! Frog's legs?!... That was many years ago (in my defence).

Fluffy Pancakes
Loved these pancakes! I cut the salt slightly though, and it was still sufficient. The only problem I had was that the batter was so thick that it was hard to work with. Very fluffy and delicious, though. Thanks for the recipe. Sorry Aunt Jemima, you've been replaced! :)

Microwave Oven Peanut Brittle
This is a great recipe, if you know how to adjust it according to how many watts your microwave is. Thank you to the reviewer who has an 1100 watt microwave - that helped alot because that is the same as mine. It definitely makes a huge difference in the outcome. Thanks for the recipe - so quick and easy!

Mom's Apple Fritters
These are so delicious. I did double the sugar and add a tsp of cinnamon, though. For those who say that they pop up in the oil too much, and come out too thick, use 2 spoons as you are dropping them in and spread the dough out with the spoons. Works great - especially if you are using a pan to fry instead of a deep fryer.
