Roasted Garlic Cauliflower

i have this theory that i can put olive oil and garlic on anything and love it... so far it's true! i'm not a huge fan of cauliflower but i ate half a head by myself in one sitting when i made this- it's soooo good!! i made it twice the week i discovered it and ate all the second round!

Southwestern Egg Rolls

i always triple the recipe and spend some time on these to have lots in the freezer. i've never fried them but spray the tortillas with olive oil (when rolling) and bake them at 350-375 until they're golden-brown. when they're from the freezer it takes quite a while to get to golden-brown but they're totally worth it- delicious! just like the restaurant's!

Refried Beans Without the Refry

i make these all the time!! we love them. i usually freeze half or so but i may as well not because we always eat them all so quickly! and i'll be honest- i mess up the calorie count by adding about a tablespoonful of bacon grease to them while in the crockpot- it makes them even more creamy and adds a wonderful flavor.

Italian Breaded Pork Chops

growing up my mom didn't like pork chops so she never made them for us. after i got married my hubby requested chops for dinner and i was totally clueless on how to make them so i turned to my fave website- and it never lets me down! these are wonderful! now we have pork chops at least once a month! i do scale back on the breadcrumb mixture as there is lots that goes into the trash when i'm done as it's written. other than that i follow it word for word!

Best Marinara Sauce Yet

the most perfect sauce! i've never found a jarred sauce i could enjoy but always thought making my own was difficult and time consuming... then i found this. it's delicious! sometimes i "test" it from the pan by the spoonful just to get to it a little sooner!

Hot Bean Dip

this is so delicious! i prefer my bean dips a little more bean-y so i usually add another can of beans. sometimes i throw in some jalapenos for some kick but no matter what i do this dip is gone in no time! especially if i serve it with fritos- they're the perfect big scoop chip for this one. i've given the recipe away more than any other!
