Sean's Falafel and Cucumber Sauce
This was delicious! I rolled them in bread crumbs before like others recommended and they were perfect. I used a different recipe for cucumber sauce that had garlic and lemon juice, but no mayo. Great recipe!

Tomato-Mint Quinoa Salad
I used olive oil instead of sesame oil and fresh basil instead of parsley because that's what I had. It was fantastic. I can't wait to have it again in lettuce wraps for an easy lunch. Such a fantastic fresh recipe. The raisins were a great sweet touch.

Quinoa and Black Beans
This was my first quinoa recipe and I am hooked. It was delicious. The cumin really made it flavorful. I did use half of the black beans because I'm not a huge fan. I ate it with a side of sweet potato fries and it was a great meal.
