Hummus Pizza

Reviewed: Oct. 2, 2011
I was a skeptic but went for it. I used ground turkey, garlic, banana peppers, brocolli feta cheese, spicy red hummus and garlic salt. I had one piece and loved it and to my surprise -- my husband ate the REST! Will make again!

Terrific! I added 2 tsp of salt and a tsp of pepper. I also used fresh jalapeno (1.5 small ones)...absolutely delish!

The Best Banana Bread

Reviewed: Jul. 17, 2011
I used 4 bananas (very, very ripe), added 1.5 tbs of rum and used butter. The crust was amazing but I wasn't impressed w/ overall flavor. Maybe margarine would have yielded better results.

Shepherd's Pie VI

Reviewed: Mar. 7, 2011
I followed instructions except I added a bit of worchester, browing seasoning and 2 cloves of garlic to the beef. For the potatoes I used red potatoes and left on the skins when I mashed them. Instead of mashing the carrots I used a shredder and then cooked them for 2 minutes in the microwave. Used about 1/4 cup of sour cream and some butter. Baked for 25 minutes. Delish.

Chicken with Garlic, Basil, and Parsley

Reviewed: Mar. 1, 2011
Use fresh herbs instead of dried and definitely top with feta cheese at the end. INCREDIBLE FLAVOR and super easy to make. I only had 2 chicken breasts so cook for 25 minutes only or you'll have slightly overdone chicken.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Oct. 10, 2010
I used a combination spread (butter and olive oil) because it was all I had at the time. The cookies turned out cakelike so I wouldn't recommend using the "healthier" butter. Next time I will definitely use the shortening and mix with butter as the recipe calls for.

Sunshine Chicken

Reviewed: Aug. 16, 2010
Great flavor! I used skinless/boneless thighs and that cut of meat is too fatty for my taste so I'm going to try w/ chicken breasts instead. I added about 1tsp of Siracha sauce and a dash of black pepper to mine to give it some kick.

Sugar Cookie Icing

Reviewed: Dec. 23, 2009
I only gave 4 stars b/c the flavor is very delish; however, there's just no way that I can get the liquid amounts to get to desired consistency. I had to add at least 1 tsp of additional milk. This was my 2nd batch, the first I ended up mixing everythign together at once and it only worked b/c I added water at the end to get it to liquify a little. The 2nd batch I followed one advice by putting milk in bowl & slowly adding sugar. It def helped but not enough. So I would recommend 3 tsp of milk at a minimum. It's a beautiful finish. I will def keep this recipe w/ modifications. :)

Apple Pie by Grandma Ople

Reviewed: Nov. 26, 2009
My first apple pie and it was a treat for everyone! I modified the recipe just a smidge. I add 1tsp of vanilla and a pinch of nutmeg, clove and cinnamon to the syrup. I used 4 small granny smith, 1 large braeburn and 1 large ambrosia apple. I used egg wash on top crust and then put the rest of the glaze, which I kept intact minus for decorate slits. Everyone raved about it. It was divine and a total keeper. My grandmother approves...delish and beautiful.

Oatmeal Peanut Butter Cookies

Reviewed: Nov. 25, 2009
Per other advice...in place of shortening/margerine, I used 1 stick of unsalted and 1 stick of salted butter & increased oats to 2 cups. I made these 2 ways, one was plain (as recipe), another batch was with Ghiradelli choc chips, and a 3rd batch w/ Hershey Kisses. The plain & Ghiradelli batches I flattened batter w/ glass into a semi-flat circle. Shaped perfectly. For Hershey Kiss batch -- as the cookies were beginning to cool, I popped a Hershey kiss in the center of each. As the kiss started to melt, I pushed the top into the center (careful to keep the point intact). Looks/tastes like a gourmet cookie! Was repeatedly asked for recipe. Forever cookie!

Juicy Roasted Chicken

Reviewed: Nov. 18, 2009
Juicy? YES! Although I will say that I made the mistake of using butter instead of margerine and it turned out very buttery...greasy buttery. But, the flavor was great and my husband still loved it. I'll follow the exact directions next time! My leftovers went right into a stock pot for chicken and dumplings for tomorrow night. Yum!

Vanilla - Chocolate Powdered Sugar Frosting

Reviewed: Oct. 18, 2009
DELISH! So easy to make. I used a pastry bag and was able to decorate a dozen cupcapakes. I omitted the cocoa and added 3 drops of red food coloring for the prettiest pink frosting ever. So pretty...thanks so much! Definitely use BUTTER.

Grilled Swordfish with Rosemary

Reviewed: Oct. 11, 2009
Very good - used splash of balasamic vinegar as someone else suggested. Would highly recommend marinating 6+ hours for the fish to really absorb flavor. Will make again!

Asian Coconut Rice

Reviewed: Oct. 11, 2009
The recipe may be good but I just learned that I am NOT a fan of coconut rice. Made it with marinated swordfish and steamed veggies. Looked beautiful but apparently I really do hate anything related to coconut. The husband "liked" it but I doubt that I'll be making it again. Sorry! I'll stick with scented jasmine rice. :)

Suki's Spinach and Feta Pasta

Reviewed: Sep. 13, 2009
Very, very good recipe. My husband said it's a keeper! I used 2 chicken breasts sliced thinly and roma tomatos (removing the seeds before dicing) and about 2 TB fresh oregano from my garden. I also added a couple tsp of McCormick's garlic salt, half a shallot (no onions), 2 cloves of garlic and 1 tb butter. Definitely use more spinach (it looks like a lot when you put it in the pan but it cooks way down). I used half a box of whole wheat penne pasta. Would recommend doubling the recipe if you want to use an entire box of pasta. It was saucy and delish! HIGHLY RECOMMEND!

Fusion Hummus

Reviewed: Aug. 16, 2009
I got lots of compliments on it but it's not really my flavor for hummus. Be careful on the vinegar...taste as you add. I blended a bunch of crumbled feta - very nice addition. Rosemary adds excellent flavor!

Sour Cream Blueberry Muffins

Reviewed: Aug. 16, 2009
OMG...out of this world good! I was skeptical but went for it as some of the other recipes had more reviews but curiosity got me. I used 2 cups fresh plus 1/2 cup frozen blueberries. I also added 1 tsp of vanilla and cinnamon per suggestion of other reviewer. I also made streusel topping (brown sugar, flour, butter). Baked in convection oven for 22 min. Came out PERFECTLY beautiful and delicious. Excellent recipe!
