Quick and easy -- I also used a bag of fresh baby spinach and it wilted perfectly with the salad dressing. Great recipe!

Lamb and Winter Vegetable Stew

Reviewed: Jan. 18, 2010
Great recipe - I substituted potatoes for sweet potatoes because that's what I had and did add extra broth because it looked like it needed it -- but once it was done I think it would have been fine with the original amount. Will definitely make this again.

Deb's Scallops Florentine

Reviewed: Jun. 25, 2008
Excellent dish! A great way to make scallops, I was craving it again the next day. Following others instructions, I didn't precook the scallops and they came out perfect. I made it with fresh spinach. Will use baby spinach next time.

Chicken with Asparagus and Roasted Red Peppers

Reviewed: Jun. 25, 2008
Quick, easy one dish meal -- very tasty! I didn't have any tomatoes on hand so I used a can of crushed tomatoes and it was fine. Also added another 1/2 cup of broth when I added the asparagus.

Thai Chicken Cabbage Soup

Reviewed: Feb. 19, 2008
This was very easy to make, a nice healthy choice, and the Thai Chili sauce added just the right zest. I also used rice noodles. Will definitely make this again.
