Avocado Ranch Salad Dressing
de-lish! as per other reviews, i served this over a salad of romaine lettuce, cherry tomatoes, avacado slices, bacon crumbles, and gorganzola cheese. for a bit of protein, I also served Spicy Black Bean Cakes and topped them with this dressing. It was awesome!! I can wait to try this dressing on many other things.

Spicy Black Bean Cakes
mmmmmm, loved these. and talk about a super healthy combination of ingredients. i served them with the avocado ranch recipe on this site and a large salad. it was a great light and flavorful meal.

Ropa Vieja
cons: i personally dislike shredding meat because it is lots of work. Pros: flavor was great. As per other reviews, i added 1 can rotel tomatoes and 2 green peppers.
