Pineapple Coconut Cake

I made the icing first. It turned out a hot mess because it was just pure butter with pineapple flavoring (from the juice). Luckily I was able to whip it into shape by adding MORE confectioners sugar (1 1/2 c), whipped w/ hand mixer 1cup of heavy whipping cream. I did not make the cake.

Real Strawberry Frosting

Oh yeah THIS IS THEE ONE! I could've just got a spoon and went to town! Lol! Minor things I did differently: one user said to strain the purée to take the seeds out -check! Another user said to use 1/8 t of almond extract ( in addition to the vanilla) - check! Another user said 10 minutes is all you need to cook the purée- check! And I say to use one and a half sticks of butter and a half a block of Crisco butter flavored shortening - double check! Throw in a pinch of salt and.......FABULOUS!!!!!!!

Sausage Hash Brown Bake

Made this for a church breakfast - OUTSTANDING! I only had about 15lbs. of pork sausage (needed 40lbs for a 200 serving size)and it still turned out alright. Nobody complained and had more than enough. Used lipton onion soup mix instead of the french onion mix. Also I browned the meat with red and orange peppers before adding into mixture. Sautéed the onions in half a stick of butter before adding to the mixture. Browned the rest of the butter (gives it a real good flavor) - use half in the sour cream mixture and the other half in the crushed cornflakes. Can't wait to make it again.

Incredibly Cheesy Turkey Meatloaf

I did try this for the first time for a pregnant friend and her husband and they absolutely flipped over it! I used my own barbecue sauce instead of ketchup. They are still hounding me for some more and the baby is 2 years old now!

Moe's Fabulous Mashed Potatoes

I made this for a friend and her husband (she had a baby - with a C-section cut) and they absolutely loved it! Using those Yukon Golds gave it a more rich and hearty taste than regular potaotes. Although they're a lil' more pricier, but they are worth it! Watch the kosher salt though I 'poured' a little too much and it made them salty - but good! lol!

Best Ever Corn Muffins

The texture was good and the taste was too cake like but it was edible. I like every one else will tweak this recipe to make it taste more like CORN muffins. One T. of vanilla did astound me - needless to say that will be cut down to 1/2t. instead and the butter and cornmeal will increase.
