A Simply Perfect Roast Turkey

Great way to roast a turkey! I have a roasting pan with a lid. I roasted the turkey with the lid on for the first two hours and then removed the lid for the last part of the cooking time. I rubbed the turkey with butter and added chicken broth to the pan as per the directions. I did not bother with basting the turkey while I had the lid on. I did baste about every 30 minutes after I removed the lid. The result was a very moist bird with beautiful crisp skin. One other suggestion, I like to buy a fresh bird whenever possible.

Quick Chicken Piccata

This is a great quick and easy recipe. If you have a chance, watch the video, it offers some great prep tips. I made it as per the recipe with one exception. I did not want to open a bottle of wine, so I deglazed the pan with chicken broth instead. Delicious!

Easy Olive Martini Chicken

This was a great chicken breast recipe. I doubled the sauce as others suggested. The chicken was very flavorful and olives were a wonderful addition. I will definitely repeat this one.

Soft Gingersnaps

Terrific Turkey Chili

This was a great chili and it comes together very easily. I am not used to adding so many "prepared" ingredients, such as the taco seasoning and the salsa, but it worked out great. I wanted something with a little more body, so I added a can of drained kidney beans and left out the zucchini. Definitely will repeat.

Cola Pot Roast II

This was so easy and good. I pretty much followed the recipe. Added a bit more garlic (4 cloves) and added mushrooms, onions and a large quartered potatoe. It is so nice to come home from shopping and smell dinner cooking. This may be my favorite pot roast recipe.

Roasted Rack of Lamb

Outstanding. Made this for the hubby and me last night. Restaurant quality meal and definitely company worthy. I cooked it a little longer than stated, but I took it right out of the fridge. Definitely will repeat this one.

BBQ Pork for Sandwiches

Thanks for a great recipe. I followed this pretty closely. Cooked country style ribs in beef broth for about 6 hours. At that point the pork was very tender but still had texture. I combined Austin's Own Chipolte and Sweet Baby Rays Sauces for the last step. This was a good combination of sweet and hot. This could be a great prepare ahead meal. My southern hubby thought it was as good as any pulled pork that he has ever had and he has had a lot!

Banana Banana Bread

Excellent and moist but not too dense. Added only 3 large, but very ripe bananas. More banana will make the bread denser. This quantity kept the texture of the bread "cake like" and a bit on the lighter side. Definitely a keeper.

Chicken Enchiladas I

This was a great meal. I made some modifications. I shredded a store roasted chicken into a bowl. I added some chopped onion, sour cream, canned chilies and cheese. Then I realized that I only had a few tortillas. Ugh! I poured a couple tablespoons of a canned Mexican Enchilada red sauce into the bottom of my casserole. I spread half of the chicken mixture. I topped this with some shredded cheese and additional sauce and then repeated the layers. The top layer was just tortillas with sauce and a little cheese. I may have saved a few calories using fewer tortillas. End result was delicious.

Authentic Thai Coconut Soup

Fabulose! I will definitely repeat this one. I followed the recipe pretty closely. I did not have the lime leaves, but I did add the zest from an entire lime. I also subed ginger. I used about 1-1/2 teasponns of red curry paste instead of curry powder. The red paste has ginger and lime flavors and adds a nice bit of zip. Can't wait to make this again.

Spicy Basil Chicken

Great quick dinner. I substituted 1 TBS of canola oil for the chili oil to bring the heat down and only added 4 TBS of oyster sauce to cut down on the salt. End result was perfect. Spicy, but not too hot. Hubby added a bit of extra chili oil at the table to bring up the heat a little. Would definitely make this again. Use lots of fresh whole basil leaves.

Key Lime Pie VII

This is the best key lime ever - and so easy. I overbaked my a little. I cooked it for 15 minutes because I did not see the little bubbles on the top. The pie was delicious and sliced beautifully, but I think it would have been creamier if I had cooked it a little less.

Grandmother's Buttermilk Cornbread

Thanks to you and your grandmother my search for a delicious corn bread will stop here. It helped to read your clarification on preparation. Thanks to the reviews and other's comments, I mixed the batter in one skillet (only until combined) and then transfered the batter to a preheated cast iron skillet. It was the best!

Antojitos Minis

Very versitle recipe that can be changed to suit your own tastes. I cut taco shells into quarters and sprayed them with PAM. Pressed them into a mini muffin tin and topped with chopped chicken, cheese, pico de gaillo, etc. Delicious!

Corned Beef and Cabbage II

Excellent way to prepare corned beef. Used a Staub pot instead of foil and baked in a 300 oven for about 6 hours. Rubbed some extra pickling spice and added couple cloves of garlic to the pot. Cooked vegetables separate and added a bit of water to the pot. Delicious! Will never boil corned beef again.

Pennsylvania Coal Region Barbecue

Great weeknight dinner. I used 1/2 regular ketchup and 1/2 hot and spicy ketchup because that is what I had on hand. Delicious, easy supper. Served with pickles, fresh corn. Chips would have been nice, but didn't want the calories, so I made a salad.

Pollo Mediterranean

Excellent!!! This is a delicious and easy way to prepare chicken and pasta. I followed the recipe except I subbed veg broth for the wine as I didn't have an open bottle. I served this over 1/2 lb. of farfalle pasta and the ratio of pasta to sauce was just about perfect. Another good thing is that even though this is a creamy pasta dish, the calorie count is reasonable. This is because milk and sour cream are used in the sauce instead of the cream that would typically be used. You won't miss the cream a bit. The sauce is wonderful. This is definitely a keeper.
