Orzo and Rice

What a simple side dish recipe to have around. My kid's love the Lipton rice side dishes and this a close match. After reading some of the reviews on it tasting a little bland, I decided to alter the recipe a smidge (which I don't like doing). I went to the spice rack and grabbed some thyme, rosemary, basil and parsely to add a little more flavor and a splash of color. Overall a good recipe, thanks for sharing.

Funnel Cakes III

I had some fresh strawberries to use up so I decided to top some funnel cakes with them. I made a small alteration to the recipe and added vanilla to the batter. I poured the batter in a piping bag and added it to the oil. I sprinkled powdered sugar on some of the cakes and I also made up a powdered suger glaze to top the rest.

Fudge Puddles

These were great! I followed the recipe as written and they turned out excellent. I filled a piping bag with the fudge mixture to fill the cups. I brought these along to a get together for something different than cookies or bars and everyone enjoyed them - only mistake was not making a double batch.

Cream Cheese Cookie Cups

These were fun to make. I didn't have premade dough on hand so I whipped up a batch of cookie dough. Otherwise I followed the recipe. The cookie cups were good but due to personal preference next time I make them I will not put in as much filling. I made a batch of these to take to a family function and they were gone in a blink of an eye.

Ultimate Twice Baked Potatoes

These are delish and a snap to make. To save on time I have cooked my potatos in the microwave and after they are assembled I bake to melt the cheese. During the hot humid summer months I have also "baked" the potatos on the grill, made up the filling and thrown back on the grill to melt the cheese so I don't heat up the house by using the oven. The recipe is perfect as is, but I add one more ingredient to the filling - cottage cheese. Super yummy.

Spicy Flat Iron Steak Rub

This rub was fantastic! I scored my steak and let the rub penetrate for about an hour before grilling. I had to alter the recipe a bit due to ingredients on hand, I didn't have ancho chili powder (not sure what this is) so I used cayenne pepper and some red pepper flakes and I also used a regular season salt instead of a salt free seasoning. Only complaint I had from the family is I only did this on one of the steaks for a test run. I enjoyed mine but my family was regretful I didnt "rub" theirs.

Hash Brown Casserole II

I am so excited that I finally found this recipe! This was served with lots of meals at my grandmothers house and I haven't had it for years. When I made it I didn't have the corn flakes on hand so I left them out, it was good but I prefer them on for the crunchy texture. Thanks for the recipe.

Special Buttercream Frosting

This is by far the best buttercream frosting I have found! I have made it exactly as written which was very good and I have made it with a change of the recipe to fit my family's preferences. The change I made is to use 1 cup of shortening and 1 cup of butter. I feel so bad for the people who buy that yucky frosting out of a can from the grocery store. If only they knew about this recipe...
