Spinach Feta Pizza

Used store bought crust to save time but the topping is seriously delicious! Basting the crust with olive oil and garlic powder is a must. No mushrooms or onions on hand used extra fresh garlic and fresh tomatoes instead.

Quick and Easy Alfredo Sauce

Ok this is fantastic! I halfed the recipe and added fresh garlic to sauted shrimp and broccoli, threw that in. I can't wait to try other add ins and pasta varities this is going to be a staple for sure!

To Die For Blueberry Muffins

I went out and bought a jumbo muffin tin for this recipe...it was well worth the investment! I double the reciped, used frozen blueberries coated with flour, splenda instead of sugar, skim milk and made my own little crumb topping varitation. I did end up adding a splash more milk but just a splash. The result was fantastic! 6 jumbo muffins and 4 regular size. I am never making any other muffin recipe, this is the best! I can't wait to try other varitions like chocolate chip....banana nut.... cranberry... the possibilites are endless.

Brown Rice and Chicken Casserole

I thought this was ok...my teenager loved it. I made some changes, first I cut it in half as 12 servings for 2 people was way too much. I used cream of broccoli soup, sauted my chicken breast in some italian dressing, added the 1 glove of garlic along with a tsp of garlic powder. I Had to finish this off in the microwave as it was a bit soupy after the baking time but I think that was because I mistakenly added a bit to much water. I will make this again and play with it some more.

Hot Pizza Dip

Everywhere I go I am asked to bring this. I usually make two, one with just the veggies and one with pepperoni. I never had the grease problems others mentioned I use the sliced pepperoni from the deli and chop it into fine pieces. I Serve with French baguette. This is a quick yet delicious appetizer.
