I've never rated another recipe twice before but felt compelled to with this one. I just made it for my best friend's baby shower & it was a smashing success. Yes, the icing is not a thick "frosting" type but rather a wet glaze which covers all 3 layers, the sides, and spreads around the sides and bottom of the cake beautifully on a platter (just make sure you sift the powdered sugar and beat it well with electric beaters in a bowl to prevent lumps and uneven coloring). Everyone loved the appearance and ESPECIALLY the taste...if you are looking for the ultimate in a sublime moist strawberry cake, try this recipe and don't change a thing!!! **UPDATE** I made this into cupcakes using the Cool Whipped Frosting from this site instead of the strawberry icing (substituting chocolate pudding for the vanilla), it went over like gangbusters and was the first dessert to go at the my potluck! This recipe just totally rocks!!!
