Strawberry Bread

The thickness of the batter surprised me a little. It took longer to bake because it was so dense, so the ends were a little overcooked. I agree that it needs more strawberries. I used chopped toasted almonds in place of walnuts, 1/2 t vanilla extract and 1/2 t almond extract, which worked nicely. Thought the flavor was really good.

Quick Hoppin' John Soup

Delicious and so easy! Will be making this again. I doubled the recipe, and only had one package of wild rice, so I also used a package of Zatarain's dirty rice as well. Worked great.

Tasty Green Bean Casserole

Did a pre-Thanksgiving test run and voted to include it this year. Needed a little more salt than I thought...and I used worcestershire instead of soy sauce, which I think was better. Will probably add a ritz cracker topping. It's a keeper.

Really sweet, as said before. Can adjust consistency by adding milk and/or powdered sugar. Does well to dip cupcakes in as a glaze, but gets thick fast. Will use again.

Corn Dog Muffins

I'm obviously in the minority...but I didn't think these were all that fabulous. Tasted like corn muffins w/ a hot dog stuck in the middle - because that's what they are. Not so reminiscent of corndogs to me or my husband. Sorry. :(

Molten Chocolate Cakes With Sugar-Coated Raspberries

I had the same problem as a couple of other reviewers...spongy and eggy. Not appetizing or chocolatey. I'm sure I did something wrong, but not sure what it was.

Cranberry Hootycreeks

I made a test batch of these cookies this weekend since I plan to give them to family for Christmas, and they are delicious! They're a different kind of cookie, and very tasty. I don't really understand the name of them, so I'll probably call them something different. What is a hootycreek, anyway? Nonetheless, they are a great addition to our holiday food repertoire.

Chocolate Peanut Butter Cup Cookies

These are fantastic...I took them to work this week, and people absolutely raved. Got several requests for the recipe. I found that they actually make about four dozen instead of three (still good sized cookies, too). I didn't have regular Reese's, but had a bag of the new "Inside Out" Reese's where the chocolate is on the inside and the peanut butter is on the outside, and needless to say they were still delicious.

Black Bottom Cupcakes I

These are really delicious. I brought them to work and everybody loved them. I didn't have cider vinegar, and it didn't seem to make a difference. I also had to use regular sized chocolate chips and they were fine. YUMMMM.

Chocolate Trifle

This is an easy, delicious, and pretty dessert. If you opt to use a trifle bowl as opposed to a regular glass bowl, you might want to third the brownies and pudding mix instead of half them for the layers. Trifle bowls are tall, and you will run out of brownies for more than two layers. Also, I topped this with mini chocolate chips instead of shaved chocolate. A lot easier.

Country Pie

After reading the extreme difference in reviews, I was a little unsure about how this would turn out. I have to admit being disappointed. First, I had to bake it for about twice as long. Second, it wasn't terribly appetizing to look at. And third, it didn't smell very appetizing. Hate to be so crude, but it's true. I have had great success with most recipes on this website that have high ratings, and was disappointed with this one. It wasn't the worst thing I've ever fixed, but it certainly wasn't the best. The rice topping was really strange, and I just didn't care for it. Had to cover it in more than 1/2 C cheese just so we didn't have to look at it. One last thing - I didn't even try putting it in a 9 inch pie plate. I can't imagine that it would all fit. I used a small casserole dish instead.

Aunt Teen's Creamy Chocolate Fudge

Really good! I haven't made fudge in years because it can be so difficult, especially here in Mississippi where the humidity can really mess up your batch. I did wait until a relatively dry day, and it turned out great. I really like the combination of semi-sweet and milk chocolate chips.

I have to preface this review with admitting I'm not a big eggnog fan...having said that, I liked these okay. They had a strange kick to them that kind of bothered me, but overall were pretty good. Not my favorite, but worth the effort.

Downeast Maine Pumpkin Bread

This bread was moist, and very tasty. Just the right blend of seasonings and pumpkin flavor. Really nice during this time of year. I took one loaf to work and ended up with about 1/4 of it left.
