Cola Pork Chops

Fresh Asparagus Soup

Made it for a group with several vegetarians. It was pretty good. The soy milk gave it a little different flavor, so I might use a little less next time, but overall it was nice with a fresh salad.

Basil Pan-Seared Scallops over Pasta

We liked this, I took the advice of others and cut down the oil and butter a bit and I thought it still tasted yummy. I added some other stuff I had around like mushrooms, artichoke hearts, peeled tomato and red pepper fresh from the garden. I also added a touch of white white because I cook with wine and sometimes put it in the food you know!

Chicken a la Camille

Good stuff. Took the advice of one reader and added Montreal seasoning to the Italian seasoning, and did not use as much and it was yummy. Very moist.

Leftover Chicken Croquettes

I was afraid the patties would be dry, so I made a cream sauce to go over it and my husband loved it. The leftover chicken had been marinated in Dale's sauce (a soy based marinade, yummy) so I added a little ginger to the cream sauce and it was a nice enhancement. I used heavy cream, chicken broth, salt, pepper, and the ginger and whisked it over medium heat, added a little flour for thickening. This was a fun, new way to serve leftovers.

Easy Mushroom Rice

It couldn't be any easier to prepare. My husband cleaned up the night I served it and actually saved the tiny amount that was left because he enjoyed it so much. I added a little ground red pepper for a little subtle kick.

Slow Cooker Chicken Cacciatore

It was a rainy, yucky day and this was the perfect "spring time" comfort food. I added a can of diced tomatoes with the basil/oregano to give it a little more texture, and served it over whole grain spaghetti. Prepped it the night before so it was a breeze. It was yummy. My husband threw a few shakes of hot sauce on it. Everyone was happy.

Fabulous Fried Cabbage

Awesome Baked Sea Scallops

My husband RAVED about this. He kept saying, "This is so good, trust me, this could be served at a 5 star restaurant." He is usually nice about my cooking, but this was over the top! I used a little white wine too, and the garlic flavored bread crumbs. The topping is certainly yummy.

White Bean Chicken Chili

I took the advice of the others and substitued the salsa verde, yummy. I also added a bit more broth as someone suggested, but it was too much and had to try and thicken with some flour and water. If I used the suggested amount of chicken broth I would have been fine. It was very good, and as always, the second day was much better.

Parmesan-Black Pepper Arborio Rice Pilaf

I have never made arborio, and was happy to find it at my store. This was a great side dish. I let it sit for a few hours after I sauteed the onion and I think it helped get it moist and ready to cook quickly when I was ready. Everyone loved it, and was excellent as left overs.

Artichoke Spinach Lasagna

This recipe is outstanding. I had a party with a couple of vegetarians and I did not know what to prepare. Found this recipe and it was delicious. I am making it again tomorrow! Filling, tasty, everyone wanted seconds.
