About this Cook
Not much to say really. I've been cooking since I was high enough to reach the stove. A few of my things won awards at county fairs and the like but mostly I cook just because I enjoy it and love feeding and taking care of others.
My favorite things to cook
I love experimenting. I take what I have on hand and go with it and 9 times out of 10, it comes out great. Currently I'm in a peppers/onions/tomatoes phase and adding them to everything except dessert.
My favorite family cooking traditions
Getting up early and cooking with my Mom on Thanksgiving.
My cooking triumphs
I'm currently planning a full 6 course authentic Italian dinner party. I'll let you know how it turns out.
My cooking tragedies
I am notoriously horrible with remembering breads in the oven. If I'm in the middle of cooking, I usually boot everyone out of the kitchen and will be making salad, dinner, dessert, etc., all at the same time and I constantly forget when I have breads in the oven so they end up a bit too dark. Unless I'm specifically in the kitchen to bake a few loaves of bread, chances are that I'm gonna burn it.

Easy Peachy Cobbler Bake
Ok, a few changes were needed. There was too much syrup so I drained the syrup into a bowl, mixed in a teaspoon of cornstarch and a teaspoon of cinnamon and half a teaspoon of cloves as well as the sugar. I added it back to the peaches in the baking dish, making sure to stir them well. Then to the topping, I added 1/2 cup uncooked oatmeal, 1/2 cup chopped pecans,a half teaspoon of cinnamon and a tablespoon of brown sugar. I also used non-fat milk as I didn't have any buttermilk on hand. Bake as directed, adjusting cooking time for the type of pan used (glass dishes need more cooking time).

Chocolate Peanut Butter Bars IV
These were really, really good. I made a few small changes to reduce the fat/sugar content: used reduced fat graham crackers (about 16 crushed up), reduced fat peanutbutter and I reduced the amount of sugar to 2 cups and used 2/3 cup melted margarine instead of the butter. I also used equal parts of milk chocolate chips and semi-sweet chips for the chocolate layer and topped 1/2 the batch with finely chopped pecans and shredded coconut.

Jamaican Beef Patties
This recipe is good but I'm only giving it 3 stars because its not really Jamaican. Its more of a curried empanada rather than the spicy beef patties that Jamaica & the Bahamas are known for. Reduce the curry in the dough and add a bit of saffron. In the meat filling, use the red curry, not the yellow. The red curry is the hotter curry and that is what gives the patties the 'bite' that island food is known for. Add a bit of finely chopped onion to the meat when cooking. Also, cooking the meat with a bit of jalapeño is done sometimes as well and then when thoroughly cooked, the jalapeño is discarded or pulsed with the meat before being sealed within the pastry. Lastly, the pastry recipe definitely needs to be doubled to yield 10 normal sized patties. This is a great starter recipe and one worthy of being in your box as it leaves all kinds of filling experiemntations open to the imagination.
