Zucchini Herb Casserole

Lemon Herb Chicken

Light and tasty! I didn't have fresh basil, but I did use dried basil. I was pleasantly surprised this wasn't too bad. The lemon is important. I actually added at the very last minute. Still tasty! I served it with squash and zucchini that I sauteed with garlic, salt and olive oil and mixed with some orzo.

Loved it! Took others advice and used bread crumbs and used food processor to make a nice paste with the onions and spices. Also added garam masala like someone suggested.

Spanish Rice Bake

I used 10 minute brown rice, can of green chilies, and some green sauce. I have made this a few times now, but I highly recommend you do not use curry (I did on accident-just saw the cu on the container) instead of cumin. Makes for an odd flavor. But is great if you use the correct ingredients.

Rosemary Ranch Chicken Kabobs

This was pretty tasty! I didn't have rosemary, so I used an herbal mix that I had on hand which had rosemary, thyme, lavendar, etc...in it. Turned out pretty good! Very filling for some reason!

Chile Verde II

Did not follow the recipe, but turned out well. I did not have a lot of things on hand, but I used Verde sauce instead of fresh tomatillos and chicken thighs vs. pork. Still tastes quite yummy

This was okay. I added more spices, after I realized how few it had in it. Was not good as leftovers (soggy). Not sure I would make it again. Expensive and time consuming meal.

Not too bad. I did what others suggested-halved the butter. I also threw some coconut on top. I think I would like it better with more seasonings-like clove, nutmeg, ginger, etc...
