Simple Scones

Made these scones this morning. I didn't have any sour cream so I used soy vanilla yogurt, 1/4 c dried cranberries, 1/4 cup raisins and a tad bit of milk as the dough seemed a bit dry. It delish and very moist not dry as another person commented. I have some left over heavy cream and will use it in my next batch along with choc chips. This was my very first time making scones! I did not use a food processor to make this. I'm a firm believer in using hands to bake.

Pumpkin Bread I

Made this a few days ago and it was a hit at work. Everyone loved it. I did make adjustments to the recipe and used 3 cups of brown sugar instead of granulated sugar, added in freshly grated nutmeg and some bittersweet ghiradelli chocolate chips. I will definitely make it again!

Sweet Potato Pound Cake

Very moist pound cake. I used cake flour and cut back the sugar to 1 cup brown sugar and 1/4 cup granulated sugar. I made 3 loaves and 6 muffins out of this recipe. Will definitely make this again!

Banana Oat Bread Pudding

Great recipe! With the original recipe everyone loved it as it was not too sweet. I have made it several times now and have added different ingredients at times. I have used old raisin bread and danish pastries as well. On occasion I've also omitted the banana's and used a can of comstock apple pie filling. Like others I have also used cinnamon, 1 cup of brown sugar, 2 eggs & even used vanilla soymilk. Yummylicious! I have a co-worker's grandson who just loves this banana oat bread pudding that he will not share it with anyone in his family. LoL!
