Pecan Butter Balls

My step-mother makes these, and they are fantastic. She does two things differently than this recipe, which I follow as well. We use 1 cup butter instead of margarine...I can't stand margarine. Also, we use 2 tsp vanilla, instead of the 1/2 tsp called for in this recipe.

Chocolate Eclair Cake

I have made this cake many times. Each time everyone asks for the recipe...it's THAT good!!! The only things I do differently from the recipe are: 1) I double the chocolate topping, 2) I use regular honey graham crackers only because the store I shop at never has the chocolate ones, and 3) I use French Vanilla pudding. This is just so easy and a true hit with everyone who I've served it to.

Mom's Buttermilk Pancakes

This recipe has way too much baking soda. When you take a bite, the flavor is good, but the aftertaste is nothing but the soda flavor. While the batter itself was VERY salty, I did not taste too much salt in the cooked pancakes. My daughter LOVES pancakes, but would not eat these after the first bite. I will try this recipe again, cutting the salt and soda in half, and perhaps adding a little vanilla.

Banana Pudding IV

I followed some of the suggestions on here, using one 3.4 oz package of French Vanilla putting, and half of a 3.4 oz package banana pudding. This did NOT add any sort of fake banana flavor, as was suggested by some. It was fantastic. My husband has been a banana pudding fan since he was a child...the old fashioned cooked variety. He raved about this, saying it was the best he's ever had. Next time I will make it with real whipped cream instead of the Cool Whip.

Day-After-Thanksgiving Turkey Carcass Soup

This soup is absolutely fantastic! I followed the recipe exactly as written. My guess is that those who said the soup had too much rice in it did not add enough water to the pot. After adding 10 cups of chicken stock (2 1/2 quarts), I probably had to add at least that same amount of water, if not more, in order to cover the turkey carcass. This recipe will be my new day-after-Thanksgiving recipe every year!

Butter Flaky Pie Crust

This is the first and only pie crust that I can make time and time again with NO problems. It mixes in the food processor perfectly, and rolls out with no tears. It also bakes to a beautiful golden color and it flaky every time!

Creamy Rice Pudding

This recipe reminded me of my grandmother's rice pudding I used to eat as a child. I left out the raisins, because 1) I didn't have any, and 2) I prefer no raisins. I also let the rice/milk/sugar mixture simmer, which thickened it right up. For those who said their pudding did not thicken, try simmering it, but watch closely or your milk will burn. Also, be sure to use whole or 2% milk. This recipe will be added to my collection and I'll continue to make it for years to come!

Sausage and Bow-Tie Pasta Florentine

This is a great dish! I followed someone else's suggestion of adding diced tomatoes...I added a 15 oz can to the sauce. The only thing I can say about the recipe is that 8 minutes is NOT enough time to broil the sausage. I had my broiler on high, and kept turning them every 5 minutes...I would say it took about 20 minutes total. Perhaps my oven rack was too far away from the broiler flames??? Anyway, the taste of this dish is superb!

Broccoli Chicken Casserole III

My family loved this casserole. I followed the recipe as written with the only exception being that I added one extra garlic clove, because we love garlic in my house. My one year old could not get enough, and my husband and I brought the leftovers to work for lunch the next day.
