Grandma's Blueberry Pie

Reviewed: Sep. 17, 2008
I have to say first that I LOVE BLUEBERRIES! They are my absolute favorite fruit. So of course a Blueberry Pie sounded wonderful to me. I looked over the ingredients and decided to give this recipe a try. I had to use frozen Bluberries instead of fresh because fresh are WAY to EXPENSIVE right now. I thawed the berries then drained the juice that comes along with fruit being frozen. I made the recipe exactly as written except I added a tiny bit more cinnamon (because it is a wonderful spice) and about a 1/2 c. more of the berries just because I had a little extra. The pie smelled wonderful as it baked and when my hubby finally arrived home we tasted it. Oh dear..very very good! My husband said the only complaint he had was it didnt have vanilla ice cream to go along with it. (I thought about that half way through the cooking process) Oh well..I will buy some today and we will enjoy the pie again tonight. But this time with some vanilla ice cream. Thanks for the recipe Natalie--it was DELICIOUS! What a treat.

Pineapple Chicken Delight

Reviewed: Sep. 17, 2008
My family really enjoyed this dish. I was a little nervous about combining all of the pineapple, potatoes, bell peppers and bbq sauce. I didnt think it sounded to good but after I read the reviews I decided to give it a shot. I thought it was very flavorful and I loved how the chicken turned out so tender and moist. The pineapple and the bbq sauce gave it just the right... ZING! My family and I agreed that we didnt care to much for the potatoes being cooked along with the other ingredients. So, next time I am going to serve the chicken over mashed potatoes as one reviewer had already mentioned. You could also serve it over rice if you want. I also thought that I might marinate the chicken in the pineapple sauce for a little while. It just added such a good favor to the chicken the first time. I think marinating it longer would make it even better. The cooking time was perfect. I took the advice of other reviewers and lined my pan with tin foil. But, before I did that I also sprayed the pan with cooking spray..BOY AM I GLAD I DID! It still leaked through the foil some, but because I had sprayed the pan previous the clean up was no big deal. If you are looking for a dish that is different and pretty darn tasty then give this one a try. I will be adding this to my recipe box for sure. Thanks for the recipe!

Zucchini Brownies

Reviewed: Aug. 11, 2008
I would give this recipe 10 stars if I could. It was absolutely DELICIOUS!!! I did not change one thing and they were wonderful. The batter was extremely thick and I wondered how they would turn out. Without eggs it was harder to stir but NO BIG DEAL. My husband said he gave them 2 thumbs up. My son said that there were not just good they were DELICIOUS! My hubby had the idea of shredding up more of the Zucchini and freezing it so that in the winter months we could make it as well. He took what was left of the brownies to work today and he said they got scarfed and everyone wanted the recipe. I cant say enough about this yummy treat--try them because they are WONDERFUL! You wont regret it. My advice--try the recipe before you start making modifications because it turned out great just the way it was written. Thanks for the AWESOME recipe.

Zucchini Parmigiana

Reviewed: Aug. 5, 2008
I was really excited to try this recipe because I thought it would be fun to use up my Zucchini in an Italian sort of way. I was REALLY disappointed. My son who LOVES lasagna type dishes didnt even finish his plate. My husband and I finally scraped the top layer off and just ate the Zucchini with some of the sauce. The big problem was the top crust. It was overpowering and sort of turned mushy. Then I think that the Ricotta cheese and egg mixture was a bit to much. If I made this again I would probably cut it in half. I did like the breaded Zucchini. I thought about just making the breaded Zucchini, cooking it in the oven as recipe reads and then serving it over some pasta with spaghetti sauce. I am giving this recipe 2 stars just because I found a good breading for Zucchini that can be used in a different way.

Taco Lasagna

Reviewed: Jul. 29, 2008
I made this for dinner tonight and my hubby and son really liked it. I felt like there was something missing. I did leave out the cayenne just because I knew my son would think it was too hot and not eat it. I was not crazy about it and I probably wont make it again.

Pork Chops for the Slow Cooker

Reviewed: Jul. 2, 2008
I made tis recipe last night for dinner. I used a thicker cut pork chop and I doubled the sauce leaving out the extra salt. It was still pretty salty and the soy sauce was a bit overpowering. I only used 1/2 tsp. ginger because I am not a huge fan. I wish I hadnt added any ginger at all. I cooked the pork chops for 6 hours on low and I dont know if I just over cooked them or what but they were not falling off the bone. I wish this had been great but sadly it wasnt. I wont be making it again. Just wasnt for us.

Artichoke Chicken

Reviewed: Jun. 24, 2008
The best part of this recipe was the artichokes. I used marinated artichokes and if I had'nt it wouldnt have any flavor at all. The cooking time was WAY off. I ended up cooking it for 45 minutes instead of 30 minutes. I know this recipe has gotten great reviews but I must say that my family just didnt like it. I wont be making this dish again.

Baked Slow Cooker Chicken

Reviewed: Jun. 13, 2008
I liked this chicken and as others said it did fall right off the bone. However, it lacked flavor. I quartered an onion and also used garlic cloves as one reviewer suggested and I also rubbed it down with paprika, garlic salt, Mrs. Dash, seasoned salt, poultry seasoning, pepper-it was still pretty bland. I shredded the rest of the chicken and I am going to use it to make chicken enchiladas.

Banana Crumb Muffins

Reviewed: Jun. 13, 2008
I would highly recommend this muffin recipe to EVERYONE! Oh my goodness!!! YUMMY! I used 1/3 c. of oil instead of butter as some of the other reviewers suggested. They were a treat. My family loved them and YES they are a bit messy but the taste was well worth the mess. YUM

Hamburger Vegetable Soup

Reviewed: Jun. 11, 2008
I really liked this soup-ALOT! I had a pound of hamburger in the fridge and didnt know what I was going to do with it. I was sick of the same ol same ol so..I ask for a suggestion and this recipe was the one that stood out. This soup was SO easy, quick and delicious. It reminded me of a soup my Mom makes which I never get to eat because I live to far away. Anyways..the family loved it. My son told me "That was Dang good Mom" so this will be added to the recipe box. It is nice to try a soup that is a little lighter than the regular heavy, thicker soup (which I love on a cold winters day). Next time I make it I am going to add some Summer Squash and maybe a little bit of Zucchini. YUM!Definantly a keeper and worth a try for anyone who is questioning it. TRY THE SOUP!

Chicken Caesar Pasta

Reviewed: Jun. 7, 2008
Okay, I read all of the reviews about this recipe. I dont get how you can rate a recipe that you completely changed and then call it "not all that great." That sort of bugs me a little bit. Anyways, with that being said I really enjoyed this recipe. I was looking for something quick, easy and yummy. From start to finish this dish took me like 20 minutes and my family loved it. I thought it was a little weird to be adding hot pasta to lettuce so I must admit I did change that a little. I did'nt mix all of the ingredients together like the recipe said too. I mixed the caesar dressing with the cooked chicken and pasta then I served it over lettuce with the croutons and parmesan cheese. I used a good quality caesar dressing because I think that makes a HUGE difference and I also think the red wine vinegar gave it another really good flavor. I was so happy with the end result. My husband thinks it could have used a little more sauce but he is a sauce man and I thought it was great the way it was. He still scraped his plate clean. This recipe was Quick, Easy & a hit with my family. I will definatly make it again. YUM. Thanks for the great recipe.

Grandma's Chicken Chardon

Reviewed: Jun. 4, 2008
My family really enjoyed this recipe. I followed some of the other reviews suggestions. I doubled the butter/lemon also and I also doubled the mushrooms. The Italian bread crumbs are a must. I added alot more garlic. I used 1 1/2 tsp. garlic with the bread crumb mixture. I also used 4 minced garlic cloves as another reader had suggested. I might add a little bit more next time. I served this dish over angel hair pasta. I also made breadsticks and a green salad to go along with it. Very Good! Thanks for the recipe. It is a keeper.

Brown Sugar Oatmeal Pancakes

Reviewed: Jun. 4, 2008
These pancakes were WONDERFUL! I made them on Friday then made them again on Saturday. I plan on making them again this Saturday. They are VERY filling. I ate two and I felt pretty full but in a good way. I loved the flavor that the brown sugar adds mixed with the oatmeal. I could eat these without syrup and be happy. Thanks for such an AWESOME recipe. It is definately a keeper.

Easy Slow Cooker French Dip

Reviewed: May 28, 2008
I am making this recipe for the 2nd time in about 2 weeks. I cant say enough about it. I cut the meat into slices and then cook a little longer. It adds more flavor I think. I also added garlic salt and ground pepper. My family could probably eat these a couple times a week. My son even loves this sandwich and he never likes to try anything new. Thanks for the AWESOME recipe! It is definately a keeper. YUM!

Five Minute Ice Cream

Reviewed: May 25, 2008
This was not what I was expecting at all. I thought I was making ice cream. Turns out we made a smoothie that was way way to sweet and rich. My husband makes "smoothies" all of the time. He uses a small bag of frozen berries, 1 med to large frozen banana- 1% milk and splenda to taste. Alot less calories and alot better for you.

Marie's Easy Slow Cooker Pot Roast

Reviewed: Mar. 6, 2008
This was DELICIOUS!!!! When I read the recipe it sounded really good. I told my husband just once I would like to top your Mothers roast! After he ate this roast he said, "This is WAY better than my Mom's roast." It was a hit! Yea! I did follow some of the other reviewers advice. I added 2 bay leaves and more liquid. I used 2 c. beef broth and about 1/2 c. water. This was wonderful because I was able to make gravy. I made a rub out of garlic salt and the McCormick Montreal Steak Seasoning. The combination of all of the ingredients gave the roast a wonderful flavor. I cooked it for about 8 hours on low and the meat was falling apart. Oh...so GOOD! The only thing I would do different next time is add more veggies (potatoes & carrots) Cant say enough-YUM!

Cold Day Chili

Reviewed: Mar. 6, 2008
This was a good "starter" chili. My husband and I both agreed that it needed more liquid. Next time I make it I will probably use more diced tomatoes, maybe some tomatoe juice and a can of tomatoe sauce. It also needed a little more spice. I will probably go a little heavier on the chili powder.
