Pecan Pie V

This pie is amazing! I made it for Thanksgiving this year and read the reviews first. I actually wound up doubling the recipe and I baked it in a 9.5" deep pie dish. I ran out of brown sugar so I just added a little more white sugar to make up the difference. I followed other reviews and baked the first 15 mins at 350 and then reduced it to 300. After 50 mins I thought it was still rather runny inside even though there was a light colored crust on top. So I took a knife and broke down the crust and mixed it back into the batter and baked another 30 mins at least, maybe longer (I just kept checking it). It turned out great and I can't wait to make it again!

Cream Cheese Jalapeno Hamburgers

These are a regular at our house. I use canned jalapenos and leave a little juice with them. It makes them easier to mix in with the cream cheese. My husband doesn't eat spicy food so I make 1/2 with bacon bits instead of jalapenos. They are excellent!!

Spaghetti Sauce II

I made this sauce last night to freeze so I would have it on hand later and as it cooked I kept tasting it and it was just getting better and better! I omitted the onion and sausage and just put the garlic in with the rest of the ingredients I also used stewed tomatoes as I didn't have whole tomatoes. The combination of spicy and sweet is wonderful.

Banana Crumb Muffins

This is a great recipe! I used suggestions from other members and substituted canola oil for the butter and used 1/2 c Splenda instead of regular sugar. I also used 1 cup wheat flour and 1/2 white flour. I added 1/4 tsp nutmeg to the dry ingredients, 1 tsp vanilla and 2 Tbsp instant coffee to the banana mixture. I added 1/2 c mini chocolate chips just before I poured into the mini loaf pans I used-baked for 25 mins. May try adding pecans next time to the crumb mixture. Loved it!!!
