Chicken Stir-Fry

Very easy, very good. I tinkered around with the vegetables a little, used green and red bell peppers, sugar snap peas, red onion and bean sprouts. But it turned out great. I was thrilled when my husband went back for seconds!

Avocado Egg Salad

This was fantastic! I was looking for a quick snack and some way to use an avocado that was about to go bad and stumbled across this recipe. I didn't have any red onions on hand, so I skipped those. I also added a pinch of sea salt, some cracked black pepper, and a couple dashes of cayenne pepper. YUM!

Cream Cheese Jalapeno Hamburgers

Good flavor, but the recipe as written is too messy. I've made this twice and, for the life of me, can't get the burgers to hold together with the cream cheese stuffed in the middle. I recommend using the jalapeno cream cheese as a spread on the bun instead.

Party Punch IX

Surprisingly good! I made this with blue jello for a baby shower (in which the mommy-to-be is expecting a boy, obviously). The addition of the pineapple juice turned it a little more aqua than blue, but it was still very cute and got great reviews from the shower guests. I deduct one star only because it's kind of a pain to make (getting it all into the freezer was a hassle).

Zippy Egg Casserole

This was a big hit with my family for Easter brunch, and on many occasions since! Using the croutons as a base layer is brilliant. The last couple times I've made this recipe I've modified it by adding some cubed cream cheese into the cheese layer, which makes it extra creamy and is a nice balance to the sharpness of the other cheese. I also kick it up with some cayenne pepper and fresh ground black pepper. These modifications easily take this up to a five star recipe.

Shredded Beef Chimichangas

My husband and I were not fans of these shredded beef chimichangas. He'll typically eat just about anything I make, and we both love tex-mex, but he specifically requested that this recipe get thrown out. The flavor of the beef was decent, but the recipe is just missing something. Baking the chimichangas left them tough and chewy, not crispy and crunchy. Perhaps with some cheese melted in with the beef they could be better, but I don't see myself ever using this recipe again and finding out.

Broiled Tilapia Parmesan

My topping never really browned, but it was still really yummy. Great flavor! My local grocer only had one tilapia fillet, so I substituted red snapper. Came out pretty well.

Feta Chicken

Pretty good, but I think it would have been a bit bland without the changes I made. My husband isn't a tomato fan, so I used regular (reduced fat) feta. I also added quite a bit of seasoning (garlic pepper and a greek blend) on both sides of the chicken, and in with the bread crumbs. It came out a bit salty, so I'll alter my seasoning blend next time, but I think the chicken would have been boring without something mixed in with the bread crumbs. I also sprayed a quick shot of cooking spray on top to help keep the outside crusty, and upped the cooking time to about 38 minutes (I used fairly large chicken breasts).

Oatmeal Raisin Cookies I

The flavor is fantastic, but my cookies came out very flat even after taking special care not to overwork the batter. I had to add a couple minutes to the baking time because at ten minutes they were still very mushy. Leaving them in for 12 minutes gave me a very moist, chewy cookie that fell apart easily. Leaving them in for 14 minutes gave me a pancake-flat, crunchy version. Either way, they taste very very good and both the chewy and crunchy versions got rave reviews at my house.

Creamy Rice Pudding

Very creamy and good! My only additions/changes were to make it with brown rice instead of white, and to add a couple tablespoons of Splenda's brown sugar blend when I added in the vanilla. That added just the perfect amount of sweetness to an otherwise fantastic recipe. Even tastier after letting all the flavors blend in the fridge overnight.
