great summer recipe. I added sauted and diced seasoned chicken along with softened onion garlic and pepper. Mixed everything together at the end.

Linguine with Chicken and Sauteed Vegetables

This was simple and easily adaptable to what is on hand in the kitchen. I boiled my vegetables as stated in the recipe, however, a little longer. Definitely would taste better sautéed but not as healthy!

Pasta Primavera with Italian Turkey Sausage

Outstanding. Easily adaptable to what is on hand. I used zucchini, squash, cherry tomatoes, onion, garlic and mushrooms. Only a tsp. bouillon and a dash of white wine. Delish!

Orange Pecan French Toast

Made this for the first time on Christmas day. It was amazing. I prepared it all on the same morning with a loaf of day old French bread. Only changes I made were to use maple syrup instead of corn syrup, 1/2 c. OJ, and reduce the sugar slightly. Let it refrigerate for one hour and baked 30 minutes. Delicious!

Tomato-Bread Salad with Basil and Capers

This is defintely a five star recipe. I made as written except at the end added a little balsamic vinegar. This made it even yummier but it wasn't necessary. Obviously, there is quite a bit of chopping but I thought this was super easy to put together....

No-Bake Lasagna

I doubled the recipe and added a half pound of ground beef to the sauce. I also used slices of mozz. cheese and layered it noodle/cheese/sauce and repeat until all ingrediants were used. I srinked parmesean on top and then threw each plate in a warm oven to let everything melt together. This tastes just like lasagna but is soooo much easier.

Lori's Spicy Chipotle Lasagna

I had to scale the recipe to half because of what I had on hand. This def. needs a deep dish lasagna pan for the full recipe! I had to make some changes but mine came out de-lish! I rinsed off my chipotle from the can diced it up and through it in with a 15oz can of diced tomatoes in sauce. Used half fresh and half dry herbs. The sauce is amazing and I can definitely imagine it in other things. I had to use shred moz. but would like to try sliced next time. For the spinach, I used fresh, about 8oz that I chopped then wilted in the microwave. I was only able to use one layer of zucchini. I will def. make this one again with ALL of the ingrediants on hand!

I make these once a week and they are better than any store bought bar, IMO. Changes I make: protein powder for flour, add 1TB almond butter, reduce brown sugar to 1 TB, use slivered almonds, pumpkinseeds, flax seeds, seasame seeds. Omit dried fruit. Love them!!!!

Potato Leek Soup III

I halved the butter and added 1 garlic clove. Added a dash of tabasco sauce. I used half heavy cream and half half/half. Was delicious but next time I will use just half/half. Best soup EVER!

Firecracker Grilled Alaska Salmon

The marinade and cook times for this a perfect - 5 star all the way. I would never marinade my fish for more than an hour depending on thickness to maintain the structure of the fish. I served this on top a bed of sauteed rainbow chard. Delicious.

Fruity Curry Chicken Salad

I pretty much made it exactly as written and it was the best chicken salad I have made yet. Used craisins instead of raisins. Chopped everything very fine. Decreased the amount of onion/celery. Will def. make again.

Quinoa Salad with Dried Fruit and Nuts

I thought the flavors of this salad were pretty good.I have been making grains like this ALOT lately. To me the recipe has to have a dried fruit, some crunch from veggies, and a nut to be really good. To be great crumbled cheese would be in it too. For this I made as written except to only use 1 C. quinoa, 1 green onion, and craisins instead of raisins. Would be good with some crumbeled feta I imagine.

World's Best Pasta Sauce!

I have made ALOT of homemade sauces from recipes from this site. This is by far the best. I still think Prego with added garlic, basil, and sugar is still better! This one is much healthier and I will continue to make it..I made as is except for adding a few splashes of red wine.

Chicken Pot Pie IX

Beyond easy and delicious. I boiled the diced chicken with 1 potato, carrots, celery, and poultry sesaoning in chick.broth for 10 min. Then I sauteed onion and mushrooms in 5T of butter andthen made the sauce -2C of reseved broth and 3/4c of milk and sesoning. Added peas during the last 5 minutes of cooking.
