Mexican Shepherd's Pie

I have made this a few times- twice with ground turkey, and tonight with ground beef. I recomend the ground turkey over the beef.

Butternut Squash and Turkey Chili

Black Bean and Artichoke Burritos

yumm! I added extra garlic, cumin, chili powder and a pepper (like some one suggested). I think it would have been great with sour cream, but we didnt have any. Will make again soon!!

Spanish Cod

my boyfriend said "its like we have our own ivars in our kitchen" I am thinking he ment the nice fancy Ivars, not the fast food joint. I had to change it a little due to lack of ingredience... I used stewed tomatoes and omited the greek olives and spices. only think I would really change is the name... Mediteraian Cod not spanish cod. and I made brown rice as a side to sop up the left over sauce.

Stir-Fried Pumpkin

The pumpkin doesnt have a whole lot of flavor. I used toasted sesame seeds and added a red pepper. It was pretty good, but the pumpkin takes so long to cut up that I am not sure if I will make it again. Regular stir fry is fine by me.

Cream of Pumpkin Soup

Yumm! After reading some reviews I made some changes; First I dont eat meat so I used veggie broth, I Added extra brown sugar, some pumpkin pie seasoning and cayenne pepper. I also used nonfat half and half to cut down on the calories.- when I was done cooking I thought it looked a bit thin so I boiled up a potato then strained it and added to the soup. I think the potato really made it amazing- I think bacon would mae a good addition for you meat eaters, especially with the potato addition.

Potato Pancakes

I kind of used this as a base- I used left over potatoes from last night, small potatoes quartered, with olive oil, rosemarry, basil, garlic and salt cooked in tin over the bbq. I smased them, and added 2 eggs, a small onion finely chopped, grated cheese, and pancake mix, and water. man, they turned out really good!
