Quick and Easy Pizza Crust

This works! I made a double batch and (of course) failed to read the details, so I put all the ingredients except flower into the bowl and then let it sit for the 10 minutes. I think the sugar and yeast in the warm water worked even better than the yeast alone, because after adding the flour (and a little more to get the right consistency as I kneeded it) it really did it's thing. Within one hour (the time it took to get the stuff out for making the individual pizzas) we ended up having enough pizza dough for 8 10" pizzas. Nice thin crusts that rose just a little while cooking. Just like in Italy. Perfect. TIP - since the individual pizza were for the kids to decorate, we precooked the pizza crusts for about 4-5 minutes before toping them.

Pizza Dough II

This dough works great for calzones. I used a little extra yeast (3 tsps instead of 2 1/4 tsps). The dough was nice and stretchy so I was able to make nice thin shells. The kids loved it.
