Mom's Favorite Baked Mac and Cheese

this was so delish! i changed mine a little. topped it with panko crumbs mixed with butter and parmesan cheese. i only baked for 10 mins at 350 since some reviews complained it gets dry. then I broiled the top to get the crumbs nice and brown and crispy. this outshined the rest of dinner. i kept telling myself "just one more bite" until I was ready to burst! honestly, this is almost too good... i love mac and cheese (or anything cheesy!) and this will be my new addiction!

Charley's Slow Cooker Mexican Style Meat

this was exceptionally good. i used a 2.5 lb roast. added fresh chopped jalapeno, cumin, minced garlic, fresh lime juice and fresh cilantro. this smelled as good as it tastes. i couldn't stop myself from taste testing! i also shredded my meat after the first 3 hours on high and then put back for 3 hours on low. it soaked up all the juices nicely and the meat was super tender. oh and i also added diced potatoes. this was a wonderful and authentic mexican recipe!!

Chicken Cordon Bleu II

EXCELLENT! My hubby and father in-law loved this chicken. They kept thanking me for dinner all night and even the next morning! =) I made mine with proscuitto instead of ham and I seasoned the chicken breast with garlic. I also used half & half instead of heavy cream. Otherwise, I followed the recipe exactly. Next time I will probably use regular milk since the sauce thickened a little too much. Regardless, this recipe is so yummy no matter how you do it. I will definitely make this again and again!!!

Avocado Stuffed Yams

At first bite I wasn't sure what to think because it is definitely a different mix of flavors. But by the third bite I was in love. What a wonderful and unexpected combination! Hubby was hesitant at first too and then proclaimed they were different, but very good. I added jalapenos to mine and used onion powder instead of chopped onions. Will definitely put this in the regular rotation.

Cajun Style Baked Sweet Potato

Yum! I make these once a week now. Hubby loves them too. I dice my sweet potatoes and throw them in a ziploc with spices and oil. I double the red pepper since we love spicy. Perfect replacement for regular potatoes and fries!

Grilled Salmon with Habanero-Lime Butter

Very nice flavor! Not as spicy as I expected but that's probably b/c I used jalapenos instead of habaneros. Also made with trout instead of salmon. I bet the marinade and butter sauce is good on just about anything. I will definitely be making this again and experiment with different fishes!

Zucchini Pie

Yummy! I shredded my zucchini and added shredded italian cheese blend to the mix. Then sprinkled parmesan on top before baking. This came out light, fluffy and delicious! Leftovers were good too ;-)

Brown Rice, Broccoli, Cheese and Walnut Surprise

This is really good and perfect for a quick meal. I have already made this twice this week! You can substitute other veggies for the broccoli too. And no need to precook veggies. Just throw them in the pan the last couple minutes of the rice cooking. They will steam to a perfect el dente.

Coconut Cream Cake I

Delicious! I followed others advice and used all of the sauce and allowed the cake to cool at room temp first before refrigerating. Kept in fridge for 2 days. Whipped up the frosting before serving using powdered sugar instead of granualted as recipe calls for. Frosting was perfect... light and not too sweet, which balances out the sweetness and richness of the cake. This cake is so moist and yummy. My friends accused me of buying it from a bakery!
