Apple-Cranberry Crisp

This was heavenly! I loved the rich, tangy sauce that formed underneath, and the cranberries made it so pretty. Many reviewers have suggested making more of the topping, but I disagree; the fruit is the main event here, and I thought the proportions were just right.

Libby's® Pumpkin Cranberry Bread

This is a great holiday bread! It turned out nice and moist. Next time, I'll definitely increase the cranberries, maybe to 1 1/2 cups. Chopped walnuts would be a nice addition, too.

Pumpkin Gingerbread

This is the perfect fall bread. The recipe made two very big, flavorful loaves. They came out nice and moist. Great with a cup of coffee. I'm looking forward to breakfast the rest of the week.

Zucchini Brownies

These brownies are magical! They stand up to any brownies I've ever had. You would never guess they're full of zucchini. The consistency hit that sweet spot between fudgy and cakey. I normally wouldn't add frosting to brownies, but I really enjoyed it on these.

Lentils and Rice with Fried Onions (Mujadarrah)

Delicious! Following other reviewers, I put a chicken bullion cube in with the lentils & rice and added a teaspoon of cumin and a bit of cinnamon. I will use more of both spices next time. Also, the onions are the best part, so the more you use, the better! I used two, and I'll use three next time.

Chocolate Chip Pumpkin Cookies

Great cookies! I made them for my fall-themed birthday party and they got lots of compliments. On the advice of others, I increased the cinnamon to 3 tsp and added 1/2 tsp nutmeg. Just about right, I think. I also used applesauce for half the oil. I'll make these again!

Buffalo Style Chicken Pizza

As others have noted, you can really scale back on the blue cheese dressing and the buffalo sauce. I also used half cheddar, half mozzarella on top. One of the best pizzas I've ever had!

Pumpkin Pie Spice II

This is a great money and hassle saver. I've compared lots of pumpkin pie spice recipes, and I like the relatively high proportion of cinnamon in this one; personally, I don't like to be overpowered by nutmeg or ginger. I used this to make pumpkin cranberry bread, and it turned out great.

Quick and Easy Pizza Crust

This is just what I was looking for. I'd never made my own crust before trying this recipe, and I was really proud of the result! I added a little onion powder and some basil per other reviewer's suggestions, and it really made a difference.

Apple Carrot Muffins

Ah, I'm in love. I left out the walnuts and added 1/4 c. semi-sweet chocolate chips. The second time around, I used half white and half brown sugar, with tasty results. Friends and relatives have loved these muffins, too!

Zucchini Bread IV

I took the suggestions of several reviewers to tweak this recipe, and the result was amazing! I used 2 1/2 cups zucchini, used applesauce in place of half the oil, and added a streusel topping before baking. I can't get enough of this stuff!

Mushroom Orzo

This is the best pasta dish I've ever made! It was quick, easy and wonderfully flavorful. Following other reviewers' suggestions, I reduced the butter to 2 T. I used reconstituted dried shiitake mushrooms, and used their broth for all of the liquid. I probably used about 2 c. liquid total. This was great with grilled chicken.

Coronation Chicken

I was getting nostalgic for the coronation chicken I used to serve when I worked at a sandwich shop in England, and this hit the spot. I don't normally like cooking with so much mayo, but it's an essential part of this recipe. It was nice served on lettuce with toasted brown bread on the side for dinner, and I plan on making a sandwich filling of the leftovers.

Blue Cheese Waldorf Salad

This really hit the spot! I followed a reviewer's suggestion and added a chicken breast to make it a dinner salad (great served with Jiffy corn muffins). I used Braeburn apples -- nice and crunchy. I used skim milk for buttermilk, with a little lemon juice added (a friend told me I could do this for buttermilk -- anyway, it tasted fine). This is going to be a favorite recipe!

Baked Oatmeal II

This was really good. After reading others' reviews, I reduced the brown sugar and used applesauce in place of half the butter. I halved the recipe and baked it for 30 minutes in an 8x8 baking dish. I was glad that I greased the pan; I think it would have stuck pretty badly otherwise. I poured a little milk and sprinkled a few walnuts over the top to serve. A very nice change from my usual morning oatmeal. I'll be making this again.
