Best Brownies

OMG is all I can say... these turn into perfect brownies every time and anyone who says they are "cakey" is doing something wrong. I have tried many but always come back to this one. The only thing I will say is that they don't need any icing at all, they are sweet enough!!!! Enjoy

Chicken Fajita Marinade

I thought this marinade was really good. I added a little more of all the spices and a couple more cloves of garlic, marinated 2 chicken breasts (cut up) in the fridge for about an hour. Then I cooked the chicken, some onion and red pepper IN the marinade. I didn't give it 5 stars because I've had better, but all in all a good recipe and I would probably make again. Thanks!!

Simple White Cake

This really is a simple white cake... It took minutes to prepare and turned out great. I used half the sugar and it still turned out fine. I did use my mixer and really beat the eggs and the batter, it filled with air bubbles and resembled yellow whip cream. The end result was light and fluffy cupcakes that iced fantastic. I will definitely make again!! Thanks for the recipe

Strawberry Lemon Shortcake

I'm giving this recipe 5 stars because I didn't follow it exactly and it was still really good. Instead of making individual portions I made the shortcake recipe for 6 and made the top and the bottom huge. I don't think I flatened it enough so it was too "cakie" and a tad hard but still tasted fantastic. The family loved it, it looked beautiful, will make again! I'll post the picture I took. P.S. I put the lemon zest in the dough, but didn't include the lemon butter because my husband doesn't like a heavy lemon taste - it was perfect!

Honey Ginger Shrimp

Ok, here's how to take a good recipe and make it great (using recommendations from other reviewers and my own) - follow recipe as written except cut back on the red pepper flakes (way too hot to enjoy if not). Before adding shrimp dredge in flour, saute with other ingredients a minute or two, then add 200 ml lite coconut milk, simmer until thickened and pour over warm pasta!! Fantastic "Thai" like meal - even the kids loved it!

Baked Cod with Boursin Herb Cheese

This recipe was fantastic. Even my sometimes critical husband (who doesn't even really like fish) raved about it. I did make some minor changes however. I had no "spiced" tomatoes so I used canned diced tomatoes and sauted 3 cloves of garlic, 1 small onion finely chopped, and 1 small red pepper diced. I added the saute mixture to the tomatoes and put ove r the Boursin mixture. To all who want to save calories, spray baking dish with Pam and use a light herbed cream cheese ( Boursin is not necessary)!!! Will add to my regular rotation!
