Bleu Cheese Macaroni

I changed a few items in this recipe based on previous reviews, but what resulted was delicious. Instead of bell peppers, I blanched some broccoli and then cooked it in the butter with about 2 cloves of minced garlic and without the additional salt and pepper. I then tossed in about 2 teaspoons of flour and allowed that to cook for just a few seconds (to toast the flour a bit). I then added twice the amount of heavy cream asked for in this recipe and used a mix of 1/2 cup blue cheese, 3/4 cup parmesan and 3/4 cup cheddar cheese along with the 1/2 cup plain yogurt. It was heavenly. Definitely a nice twist on traditional mac n cheese.

Lamb Chops with Balsamic Reduction

This is delicious. I've made this on several occasions. While I have had issues with reducing the balsamic jus, it tasted fantastic anyway. I didn't even care that there was extra left over because that sauce tastes great on a sandwich the next day!

Delicious Egg Salad for Sandwiches

Amazing egg salad. I added one small, chopped kosher dill pickle to the recipe to add a little crunch. With the pickle, the recipe only needed a teeny bit of salt and some pepper. I will definitely be making this again.

Chicken Enchiladas I

This was delicious especially as leftovers!! I used some of the suggestions other members had written in their reviews. I used roasted chicken from the grocery store and shredded it myself as well as replacing the chopped green pepper with chopped green chiles for extra flavor. In addition, I used the suggestions Patrick offered with all of the omissions and replacements. I am only giving this a 4 star because I was not the biggest fan of the chipotle salsa and I think a verde salsa would be better for the inside. I also think it would be better to use less salsa (possibly 12 oz) and more cheese.

Roasted Red Pepper and Crab Soup

I made this recipe for my friends and they all thought it was delicious. I wanted it to be cost effective so I bought canned fancy crab instead of searching the seafood counter for fresh crab and it worked out wonderfully. I also experimented with the spices and added a little more garlic powder to spice it up some more. It was a very rich, hearty soup that we all definitely enjoyed.
