Morning Glory Muffins I

These are to die for. They are super healthy but are almost a no-sacrifice option. I soaked the carrots, raisins, and apples pieces in a bit of water, honey, and vanilla. Next time I will use a bit less sugar and bake for a shorter time. I threw in some chopped pecans. To spruce them up I'll smear some cream cheese on the top and drizzle with raw honey. So amazing, in permanent recipe collection!

Baby Back Barbecue Ribs

Good ribs, I baked in the oven on 320 for three hours (with the rub) and then BBQ'd with KC Masterpiece. Good. 45-60 min bake is nowhere near long enough.

Spicy Shrimp and Tomato Scampi

Pretty good recipe, not amazing. I used a can of fire roasted diced tomatoes which may have added an odd flavor. I also added sliced black olives and used whole grain pasta. Cheese on top is a must :)

Navy Bean Soup I

A very outstanding basic bean soup. I had never made a bean soup before so I read the comments of others and ended up with the following mods (and a great soup): PRE SOAK THE BEANS overnight, this reduced cooking time to 2 hrs, double the Worcestershire Sauce, parsley, and powdered garlic, add some Franks hot sauce, feel free to over do the ham. I skipped the tomatoes b/c the acid could impact the beans cooking. Great recipe, a keeper!

Grilled Garlic Parmesan Zucchini

I'm doing weight watchers and I'm desperate for healthy good-tasting sides. I didn't have any parsley so I went with butter, minced garlic, salt, and the cheap sawdust-style parmesan. SO GOOOOD! can't imagine how good it would be with the right ingredients. Make this!

Hot Artichoke and Spinach Dip II

truly amazing, maybe a little dry, add sour cream, about half a cup and you are in good shape. be sure the spinach is completely thawed and squeezed out.

Smoky Chicken Spread

Unbelievable! divine! I also added some garlic powder and some rubbed sage. I served it on fresh french bread and everyone is raving. It needs to be classified as chicken salad though; when I searched by that title it didn't come up but when I searched by ingredients it did. This is amazing chicken salad. The best.

really great, be sure to marinate over night and using fresh ginger is key to the fresh taste. I broiled mine in the oven for a party, everyone loved it. they took so much home there was none left for me! hey!

Easy Peach Crisp I

use fresh peaces instead of canned and be sure you peel them, you will need to bake it closer to an hour or more. absolutely divine. experiment with different cake mixes too :-)

Great starter recipe but use an envelope of powdered ranch mix instead of soup mix, add one minced garlic clove, and a few turns of the pepper mill. divine.

Dump Cake V

OMG OMG OMG This was soooo good. I changed a few things: I used tart cherries instead of cherry pie filling (found near canned fruit not near pie filling), I put some pineapple juice with the melted butter to cut back on the butter some, and I added the coconut at the end. OMG, so amazing. mix it around a bit with a butter knife about half way through baking.
