Gary's Turkey Burritos

Delicious and a great recipe for freezing! I used whole wheat tortillas and a small can of tom. sauce and a can of tomatoes+diced chiles plus a dash of hot sauce and cumin. Also, frozen corn instead of canned. I wrapped the burritos in foil and froze them (minus the sour cream, serve it on the side). When it was time to eat, just placed them in a baking dish, in the foil still, for about 30 min at 350 degrees. Yummy, and the kids agree!

Green Slime Smoothie

These are a great, quick and easy green smoothie. I don't add any ice as long as the strawberries are frozen. I don't always add a banana either, but a little orange juice is great in there.

Broccoli Pork Stir-Fry

Delicious! I made quite a few changes but this gave me a great place to start and is a very adaptable recipe in my opinion. I had leftover pork tenderloin that I used for this recipe (teriyaki seasoned). I didn't have ramen noodles so I served it with brown rice, I substituted seasoned salt for the ramen seasoning, added a little more soy sauce and about a teaspoon of minced ginger to the sauce. I didn't have green onions or red peppers on hand, but this was still great without. I also added one thinly sliced carrot.

Pecan-Crusted Pork with Pumpkin Butter

This was great, and I'm not usually a fan of pork chops. I made a couple of changes due to what I had on hand. Instead of breadcrumbs I used about 1/2 cups of crushed cornflakes and 2 TBSP of wheat germ. Also, I only had 1/2 cup of pecans but it was enough for 4 thin chops (just barely, but enough). I dipped the pork chops in an egg before dipping them into the pecans to make them stick. I'll be making this again!
