Mexican Fiesta Pasta Salad

I made this exactly as directed. After it was finished I decided it needed more red bell pepper, more onion and more cilantro. It did not turn out as well as the other reviews said it would. Will not make this again.

Green Slime Smoothie

I used fresh spinach, a banana, some plain yogurt, a few frozen strawberries & a handful of frozen blueberries. I even threw in a tablespoon of flaxseed. Hubby thought it looked gross but tried it and liked it!

Lasagna Alfredo

I did not have ricotta or cottage cheese & it still turned out awesome! I followed a couple of reviews and mixed the Garlic Alfredo sauce in with the chicken & onions, reserving just a little for the bottom of the pan so the noodles wouldn't stick. Used lots of fresh ground pepper, adding it to the chicken. I also followed a few reviews who said it was 'blah' and needed 'marinara', so I used a can of diced tomatoes with basil, garlic & oregano used for two layers. Used fresh spinach and it turned out TASTY!

Sweet-and-Sour Pork

I followed the recipe exactly. I think it ended up with too much of a vinegar taste. Maybe next time use 1/2 the vinegar, and definitely add some more garlic. Will be searching for a better recipe.

Seven Layer Dip II

Island Shrimp and Rice

this is one of my most favorite recipes. It's so easy. I use bell peppers in almost everything. Definitely add them if they need to get used up. I always use mild Rotel when making this dish, and then just a *pinch* of cayenne pepper, trust me. It will be spicy enough. Last time I made this I added cilantro and chopped fresh mushrooms. So yummy & easy.

Best Grilled Margarita Chicken... Ever!

this was delicious. I didn't have any margarita mix or triple sec. Just kind of threw what I had in a blender & marinated the chicken for a few hours. I did add a jalapeno for a little kick, so so good. Definitely will make again!

Ham and Swiss Casserole

I always make this recipe, but with a few changes. I use egg noodles but any kind will do. Sautee ham & onions with any & all kinds of bell peppers in a saucepan with terriyaki sauce & a little minced garlic. Add this to the noodles. Instead of any creamed soup, I use alfredo sauce. I also add some fresh diced tomatoes. So delicious!

After chopping up the tortillas, flour was what I had, I fried them in some olive oil to make them crispy. I removed the tortillas from the pan & then sauted the ham, red onion, green pepper & a touch of minced garlic for a few minutes. I then added the eggs & some cheese. After the eggs were just about done, I mixed in the tortillas & topped with more cheese. The tortillas did not stay as crispy as I hoped but it was still yummy. Thanks for the recipe, will try this one again!

Chicken Creole

This was super yummy and very easy to make. I used two cans of diced tomatos with garlic and onions. Next time I will definitely add more cayenne pepper for a little bit of a kick. I served it over brown rice. Fabulous!
