Egg-White Crepes

These were fantastic! I wanted to make them lower fat, so I tried using apple sauce instead of the oil and it turned out great! The texture was perfect for crepes and this was surprisingly yummy considering the whole wheat flour. I added the berries while the crepe was in the pan as suggested, then I took the crepe out and added fat free rasperry yogourt. Definately a guilt free indulgence!!!

Chicken Satay with Homemade Peanut Sauce

The chicken was fantastic! I made this chicken but used the peanut sauce recipe from 'peanut sauce II' I don't have a grill, so I skipped the skewer and grill bit and just fried the chicken in a frying pan, then served the chicken and sauce over rice. I had a guest over for dinner and he kept commenting on how good it was! I'll definately be making this again!

Strawberry Pineapple Bread

I made this recipe the first time, just as it is, but without the nuts. I loved it! However, I wanted to make it lower in fat and sugar, and I like muffins better, so I played with the recipe a bit. I tried using different sugar substitutes and found splenda to be the best. This is the new recipe with the adjustments I made: Strawberry-Pineapple-Banana Muffins. Preheat oven to 350. Grease two muffin tins, or line with muffin papers. Use 10 ounces of frozen strawberries (slightly thawed and cut up small); 1/2 (20 ounce) can of crushed pineapple, drained; 4 eggs, beaten; 1 cup applesauce; 2 small well-ripened bananas; 1 1/3 cup splenda; 1/3 cup honey; 1/3 cup sugar; 3 cups whole wheat flour; 1 tsp. baking soda; 1 tsp. salt; 2 tsp cinnamon. I combined all the dry ingredients, and all the wet ingredients, then added the dry to the wet like the original recipe. Bake for 15-20 minutes. They are so moist and delicious!

High Altitude Banana Chocolate Chip Cookies

These were fantastic! The first time I made them I followed the recipe exactly. The second time I made them a little healthier by using 4 tablespoons of butter and 1 cup of applesauce to replace the 1 cup of butter. I used Splenda instead of sugar. I also used 1 cup of mini chocolate chips. They turned out amazing and I feel less guilty than I did about the original recipe!

Pumpkin Apple Streusel Muffins

These are great! I made these with all whole wheat flour, Splenda for half of the sugar, and apple sauce instead of the oil. I didn't have any pumpkin pie seasoning so I used the spices recommended by Joyful Heart. I also didn't add any streusel topping because the first time I made the recipe as stated and I had a hard time telling when the muffins were done because the streusel seemed to be done sooner than the muffins. I will make the healthier version of these muffins on a regular basis!

Low-Fat Chocolate Cookies

These were pretty good! It wasn't til I got to the dry ingredients that I realized I didn't have any white flour, so seeing as I already had the wet stuff mixed, I used whole wheat flour expecting that to taste awful in a cookie, but no one could even tell! Even when I told people they were surprised! So these cookies can be made even healthier!

Krazy Garlic Trout

I used about half an onion for four trout and bottled lemon juice. We didn't have any jalapenos so we left that out. This was to die for and I am not crazy about fish.

Apple Cinnamon Muffins

These are the best! I made a few changes- doubled the recipe,used all whole wheat flour, I used the reccomendation to add two mashed bananas- that helped with moisture. Also, instead of 2/3 c. milk I used a whole cup. I used 6 small apples and I made half the topping. I put these in texas muffin tins. They were great!

Strawberry Lemon Muffins

These were amazing! I followed the suggetsion to substitute applesauce for the oil, splenda for the sugar and oatmeal for 1/4 of the white flour. So they tasted great and didn't make me feel guilty! Also, if you just have bottled lemon juice, 2-3 tablespoons is equivalent to the juice of one lemon.

Apple Hermits

AMAZING!!! I've made these several times and have been asked for the recipe multiple times! This is like easy apply pie, guilt-free indulgence when it's modiefied! I used half whole wheat and half all purpose flour, half brown sugar and half splenda, (or when I didn't have Splenda I used just 1 cup of brown sugar, which is plenty) half a cup of pecans, two tablespoons of butter and 1/2 cup of apple sauce as suggested. I also added a half teaspoon of vanilla and baked for ten minutes. Makes 26 regular sized cookies. MMMMm mmmm!

Pear Banana Berry Bake

This was amazing! It took me four bananas. I used a 9x9 pan. I will use a little less OJ next time. I used three fresh (small)pears. I will also make using strawberries and peaches along with the other fruit next time.

Chicken Noodle Casserole I

This was great! But I did make some alterations reccomended by others. I added a can of mushroom pieces, 1/2 medium onion, 2 cloves of garlic, 1/4 tsp. of thyme and about 1/3 cup of milk. I used a small jar of home canned chicken (about 2 breasts) , 1/4 tsp each of salt and pepper and about 1 1/2 cups of ritz crackers (1 sleeve). I doubled the noodles (used a 12 ounce package) and baked it in a 9X13 pan and that worked great!

Pumpkin Waffles with Apple Cider Syrup

These were wonderful! I doubled the brown sugar and used 2 1/2 tsp. of cinnamon. Next time I will try 3 tsp. The syrup was wonderful too. Next time I'll also add chopped pecans. YUM!

TOBLERONE-Topped Caramel Cheesecake

My husband and guests loved this! Huge hit! I also stirred about 3/4 cup of broken oreos into the batter. I didn't do a standard water bath as some suggested, instead i filled a 9 x 13 pan about 1/3 of the way with water, then put it on the rack just below the cheescake. When the top started to turn golden brown I covered it with foil. I followed the advice to turn the oven off, leave the door open and let cool for an hour. Next time ill try reese peanut butter cups.

Peanut Crunch Cake

I brought this to a BBQ and got great comments! Super easy too! I used 1/2 cup of each kind of chips in the batter and 1/2 cup of each kind of chips on top. I also used crunchy peanut butter and it turned out really well!

African Curry

This is great! I'm eating it as I write! I did make quite a few changes though: I sauteed the onion, garlic (I used five cloves), and bay leaf (I only had crushed bay leaves in a shaker so I used 1/2 tsp.) in chicken broth instead of oil to cut down on the fat. Along with it I also chopped up an individual size snack pack (65g.) of mini carrots. I used 3 tsp. green curry paste instead of the powder (next time I'll use more), I only had diced tomatoes on hand so I used those, I threw in a dash of red pepper flakes and a tablesppon of brown sugar along with the coconut and a few squirts of bottled lemon juice. I'm happy with the results!

Don't Chicken Out

My husband and I really liked this! I browned the chicken in hot chicken broth to cut down on calories. I also used one 26 ounce can of Hunt's garlic and herb spaghetti sauce and one 8 ounce can of plain tomato sauce. Next time I will add green peppers and mushrooms to the sauce and will use boneless skinless chicken leg meat instead of the legs because it would make it easier to eat. We had it over spaghetti. Great flavor!

Chicken Enchiladas II

This was fantastic! My husband loved it! I shredded the chicken in a food processor rather than cubing it. I also used 9 - 6" corn tortillas and stuffed them full. Next time I will probably double the recipe to fill a 9 x 13 pan.
