Curried Coconut Chicken

This was fantastic! This is the third chicken curry recipe I've tried, and definitely my favorite! I've made this several times and these are my revisions: I use 3 chicken breasts in total; I used the tip to cook the onions in the oil and curry until translucent. Once I also added yellow squash; green pepper would taste great too. I have used red, green, or Massaman curry paste instead of the powder. The Massaman was my favorite--I added 3 tablespoons plus an extra can of tomato sauce. I also added some fresh basil. I didn't have a problem with it thickening. In fact, I ommited the simmering part because if you cook chicken for that long after the chicken is already done, it gets way too chewy, so now I just make sure everything is heated through, which only takes a few minutes after adding the liquids, then I serve it up! Great flavor!

Apple Cinnamon Muffins

These are the best! I made a few changes- doubled the recipe,used all whole wheat flour, I used the reccomendation to add two mashed bananas- that helped with moisture. Also, instead of 2/3 c. milk I used a whole cup. I used 6 small apples and I made half the topping. I put these in texas muffin tins. They were great!

Fudge Drops

Not fantastic, but pretty good. I used pecans and dried cranberries. I think it would look nicer if the marshmallows were in tact, so to cool the fudge mixture awhile before adding the marshmallows.

Easy Cinnamon Fudge

Easy and quite good. I was worried the fudge would be two thin, but it was perfect. My Dad suggested it would be good without the cinnamon too, just as a basic fudge.

Chicken Parmigiana

This was great! I added the extra spices suggested by 'something different again!?' and spooned the extra sauce on top after baking rather than before. I served this on Spaghetti. Yum!

Mashed Potato Dream

AMAZING! I found I needed to double the amount of potatoes for the other ingredients. Instead of using 1/2 cup of milk I used 1/4 cup milk, 1/4 cup sour cream. It made it even creamier and delicious!

Easiest Egg Nog

I thought this was great! I took the advice of one of the reviews and used vanilla pudding powder rather than vanilla to thicken it up. Also, to lower the fat content I used three egg whites instead of two eggs! I think this will be one of my staple recipes!

Egg-White Crepes

These were fantastic! I wanted to make them lower fat, so I tried using apple sauce instead of the oil and it turned out great! The texture was perfect for crepes and this was surprisingly yummy considering the whole wheat flour. I added the berries while the crepe was in the pan as suggested, then I took the crepe out and added fat free rasperry yogourt. Definately a guilt free indulgence!!!

Chunky Cheesecake Brownies

I made these in a 9x13 pan so I doubled the brownie part but not the cream cheese part, next time I'll double that too. The first time I made these I put the chocolate chips in the cream cheese, but that made it a little too rich, I'll omit those next time. The second time I made them, I didn't use the flour as one person suggested (so that I could make them gluten free for my cousin). She was in heaven!- Though they were a little gooey. They definately taste better once they've cooled down, especially the next day! Fantastic dessert!

Banana-Zucchini Bread

Low-Fat Chocolate Cookies

These were pretty good! It wasn't til I got to the dry ingredients that I realized I didn't have any white flour, so seeing as I already had the wet stuff mixed, I used whole wheat flour expecting that to taste awful in a cookie, but no one could even tell! Even when I told people they were surprised! So these cookies can be made even healthier!

Spiced Peach Oatmeal Muffins

Pretty Yummy. I used gluten free stuff to make these so that my cousin could eat them. Gluten free never does taste quite the same. Next time I'll use regular ingredients, I bet they'll be way good!

Thai Noodle Salad

This was fantastic! I used chicken instead of shrimp (I had one of those ready to eat roasted chickens in the fridge from the night before, so I just chopped the leftovers up, I didn't use tahini, I used apple cider vinegar, cuz that's what I had, and olive oil instead of sesame oil. I also cut the recipe in half. It turned out great! Don't skimp on the peanuts! They really make the salad!

Stuffed French Toast II

I wish I could give this more than five stars!!! It's fantastic! The second (and subsequent times) I made it, I mixed the cream cheese and jam together in a bowl with some sugar (to make it a sweeter cream cheesy taste) and spread that on the bread, then continued as normal. I've made this for guests and they absolutely loved it! It's one of my favorite meals!
