Mimi's Zucchini Pie
I added some miscellaneous spices, but wished I had added a bit more salt. For those of you who don't know what "to taste" means (like me!), I would suggest at least a tsp of salt. I added just a dash, which was not enough for my taste. However, I salted my lovely slice of quiche-y pie and really enjoyed. You can always add more cheese to enhance the flavor, but as is, this is a tasty and healthy dish. I really enjoyed and will definitely make again!

Barbecued Taco Salad
My husband loved this, although anything with BBQ sauce on the meat is good in his book. I used 8 oz of cream cheese, rather than the process cheese, as I didn't have any Velveeta around. Overall, especially in light of the other 3-star review, this is a pretty good recipe. You can pretty much tell from the ingredient list if it's going to be your cup of tea, or not. One addition--do chop up the salad much much smaller than in a regular salad. My husband did mention that he thought it was a bit hard to eat the lettuce. Nice recipe.
