Delicious, healthy, and easy! I halved the recipe using the calculator, followed the recipe with these slight changes: substituted 1 qt chicken stock for the water and bouillon cubes, used 1 whole medium onion, 1 bag frozen southwest corn for the canned corn. For the tomatoes, I used 1 can of fire roasted tomatoes, 1 can ro-tel, and the entire can of tomato soup. Like other reviewers, I serve the sour cream on the side. Halved, this recipe makes at least 10 servings, which is great because the leftovers are even better the next day. Ran this through the WW recipe builder and for 12 servings this recipe is 3 points.
