Baked Honey Nut Chicken

I made this recipe using walnuts, panko bread crumbs and boneless, skinless chicken breasts. Since some reviews said it was quite sweet, i decreased the honey to 1/3 cup and it was delicious with just a hint of sweetness. As others have mentioned, it did not get crispy but then again, i skipped the butter drizzle. Altogether a great recipe. Just as delicious on sliced eggplant, roasted in the oven about 15minutes per side.

Spicy African Yam Soup

This delicious soup turned out very thick, almost more of a stew. Great flavor and easy to make. Definitely a keeper.

Easy OREO Truffles

Delicious, beautiful yet easy to make. A little time consuming to make them really pretty but so worth the effort. I put them in the freezer before dipping in chocolate to make them easier to handle. Everyone loves them and i was asked for the recipe several times. I made them the first time as instructed with a full pkg of cream cheese but found the balls too soft and mushy. I adjusted the amount to 1/2pkg and i make two different flavors with one pkg. Golden oreos and candy cane flavored ones are favorites.

Roast Beef with Coffee

I made this recipe quite frankly expecting a failure. All i had was a cheap cut of meat and flavored coffee. I made it in the slow cooker with Toasted Coconut flavored coffee, crossed my fingers and hoped for the best. It came out DELICIOUS!!! Even the gravy tasted amazing. Will definitely make again and again.

Cookie Balls

Delicious and super simple. A little time consuming if you're a perfectionist and want them to be beautiful. Everyone loved them and i was asked for the recipe several times. I did however reduce the cream cheese to 1/2 pkg. i had made my first batch with the full pkg as instructed and found them way too soft and mushy. With 1/2 pkg, i can make two different flavors with a pkg of cream cheese. Golden oreos and candy cane flavored ones are favorites.

Healthy Banana Cookies

These cookies are like a cross of banana bread/cookie/granola bar. Delicious with just the right amount of sweetness from the bananas and dates. They were nice and soft. I added some chopped almonds, a bit of ground flax seed and a little oat bran. I was out of vanilla so I threw in some almond extract and a bit of cinnamon. Great way to use my very ripe bananas.

Chicken Costa Brava

I made this with bone-in chicken thighs because thats what i had on hand. It turned out delicious. Both myself and my bf loved it. the cinnamon and cumin add a nice touch to it. I served it over balsamic rice as a side.

Fluffy Biscuits

Delicious! I made them with whole wheat flour, all butter and used soy milk since that's all i had on hand. I brushed the top of half of them with leftover egg and sprinkled them with parmesan-herb topping. Also, i did the dry ingredients and butter in the food processor until coarse then added the liquid and pulsed just til the dough came together. I kneeded the dough just til it was smooth. Great biscuits!

Chicken Pot Pie IX

I made this pot pie as per the recipe (only change being whole wheat flour instead of white) and it was DELICIOUS! I did have a bit too much filling for a 9" crust and will try a 10" next time but i would not change anything of the ingredients. I had plenty of liquid for this pie. Will be making this again and again.

Honey-Ginger Grilled Salmon

Just made this salmon today, definitely a keeper! I used fresh ginger and garlic as opposed to powdered cuz fresh is always better. I did not have soy sauce so i used tamari garlic sauce instead. The salmon marinated about 5 hours and baked in the oven instead of grilled. Delicious!

Slow Cooker Pumpkin Steel Cut Oats

After i started putting this recipe together, i realized i was out of brown sugar AND pumpkin pie spice. I added nutmeg to compensate and made it without the sugar. Instead, i sweetened it with stevia at the time of serving and it was delicious. My bf and I both thought this was great...like dessert for breakfast but healthy.

Almond Maple Granola

I made this recipe using apple sauce instead of oil and added cinnamon. I also cut the brown sugar down to 2tbsp and used 2tbsp of honey instead of the maple syrup. I didn't have raisins but i did have a dried fruit mix of cranberries, blueberries and goji berries. i also threw in some chopped dried apricots. Very good granola!

Fruity Couscous Salad

This was very tasty. Like a lot of others, i found it to be a little dry so i added just a splash of apple juice to the couscous as i mixed in the rest of the ingredients. Will make again.
