Panna Cotta With Fresh Strawberry Sauce

I spent all day in the kitchen fixing dinner for my boyfriend's birthday but I should have just made this! My strawberries were particularly juicy so I didn't add any water to the sauce. It was so easy to make but looked/tasted like I'd spent all day on it. He lived in Rome for several years and insists that the panna cotta had the perfect consistency and taste. A definite must-try!

Real Potato Leek Soup

Good recipe but not very flavourful. I tried like hell to give it a kick but short of tobasco sauce [which I didn't think would be such a good idea] the soup rejected my attempts! Oh well, the boyfriend liked it!

Rosemary Red Potatoes

Delicious! Just like the kind Mom used to make. In the end I made a few incedental changes. Fresh rosemary and extra olive oil at the beginning and while it was baking. Yum!

Irish Bananas

Perfect ratio of liquor to sugar. Fantastic easy dessert and a good way to get rid of those bananas that are about to go and impress your guests at the same time.

Pork Chops with Blue Cheese Gravy

I didn't make the gravy but was seriously impressed with this method of frying up pork chops. Even though it was simple and the idea of rubbing them with garlic salt seemed funny to me at the time they were the most flavourful pork chops I've ever eaten. Wow!

South Texas Carne Guisada

Tastes just like home! I'm a Texan in London and was missing fine Mexican cuisine. This recipe was exactly what I was looking for. I did do a few things differently though. Believe it or not you can find Ro-Tel tomatoes in England at a few specialty stores. Instead of the vegetables I added two cans of Ro-tel. Skipped out on the cumin and added a generous helping of chili powder. Yum!

Rhubarb and Strawberry Pie

Delicious and easy! I only made a few changes, namely cooking the rhubarb separately in a bit of boiling water with the sugar and in lieu of adding flower to the raw mixture, added two tablespoons of cornflour dissolved in water to the cooked mixture to avoid a floury taste and undercooked/too tart rhubarb and runny pie. In the end the recipe required a great deal more sugar but maybe that depends on your rhubarb.

Spanish-Style Oxtail Stew

Wow! Seriously rich! Wonderful, but a bit too rich even for me. To curb the rich taste I threw in chopped celery with the carrots and some chopped cilantro/coriander, bashed up coriander seeds and squeezed half a lemon's worth of juice on top of watering it way down. It didn't change the flavour but lightened it up a bit. Very easy and delicious!
