Crema de Calabazines
This recipe was delicious. My husband who isn't really a fan of zucchini loved it; he said it tasted like a cross between a potato chowder and a broccoli cheese soup. I made a few modifications...had no onion on hand so I used onion and garlic powder in addition to the other seasonings called for. I also used half yellow squash/half zucchini as our garden is overflowing with both. I used 1/3 less fat cream cheese and it tasted great! So creamy and satisfying for so few ingredients.

Roasted Brussels Sprouts
I love this recipe for sprouts. I sometimes mix it up a little by adding balsamic vinegar in with the oil. Excellent taste! Even the finicky eaters have their share. Also, you can easily speed the cookingtime by partially steaming the sprouts prior to dressing them and popping them in the oven.

Amazing Spicy Grilled Shrimp
This is by far the best shrimp marinade ever! Delicious on chicken as well. Everyone at my house looks forward to these shrimp and we make them every time we fire up the grill. I receive nothing but rave reviews. I suggest using fresh cilantro instead of parsley if you are a fan...it makes it extra yummy. The smell of the shrimp grilling is intoxicating! Definately a keeper.
