Easy Corned Beef and Cabbage

Served this last night to husband and guests. Delicious! This will be my go-to recipe for corned beef! The only thing I will change is to steam the cabbage separately to retain the pretty green color, as putting it in the crock-pot made it an ugly brown (Tasty though!) Thank you for this wonderful recipe!

Rich and Creamy Potatoes Au Gratin

Delicious! Made this for a crowd for Easter. Followed directions exactly but had no time to peel the potatoes so I left the skins on. Took about 45 min in the oven to cook nicely. By the time we ate, the dish was pretty much cooled but there was STILL nothing left of it by the end of dinner! Fantastic! Everyone loved it.

Super Sausage Gravy

My husband and step-dad LOVE this! We made it exactly according to recipe and it was very thick. Next time I may add a bit more milk. It feeds about three adults. If you're extra hungry, double the recipe (or maybe just the milk). We'll surely make this again and again!

Gingerbread Waffles

I just made these for me and my husband. I haven't even had a bite yet but my hubby just ran down the stairs after eating his (he ate the whole thing!) and proclaimed, "This is the best waffle in the history of the universe!" and he doesn't even LIKE waffles! I added the sliced bananas and real whipped cream. Be sure not to overcook them. Take them out when the steam is almost gone. I like ginger things SUPER gingerie - so next time I'll probably add more ground ginger. YUM!

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

Perfect and authentic! I spent a month in Thailand last year and this recipe tastes EXACTLY like what we had there. I didn't use the topping sauce though because I couldn't get the right consistency with the corn starch. It didn't even need it though..I also used canned mangos because up here in NH we didn't have access to fresh ones. SO DELICIOUS!

Asian Barbequed Steak

I think the key ingredient here is what kind of chili sauce one uses. I used a plain bottle that simply said, "Chili Sauce" and it didn't come out spectacular. Next time I will use an Asian chili sauce with more kick. Still delicious though!

Brazilian Chicken with Coconut Milk

It was good but I've had better. I can't imagine using a whole tsp of cayenne. I barely used 1/4 tsp and it had just the right kick. I would make this again. Thanks!

Thai Pineapple Chicken Curry

Delicious! I cooked the chicken first so it wouldn't take so long (I was starving and couldn't wait) and then added it to the milk mixture in the wok. And I only used one Tablespoon of curry paste and there was absolutely no heat/spicy hotness. Next time I'll use two tablespoons. SO good!

Big Soft Ginger Cookies

These are awesome! I just pulled them out of the oven and one is in my mouth and another already in my tummy! SO GOOD! These would be great with hot chocolate on a rainy day or with lemonade in the summer. Followed recipe exactly with the exception of substituting O.J. for the Tablespoon of water. I work at a bakery and the secret to good baking is not over-creaming the butter and sugar. I've learned that room temperature butter or margarine is too soft. The margarine should be soft to the touch but still have a slight firmness to it. Also, cut the margarine into several chunks or cubes before creaming to aid in the even mixing. I threw the dough in the fridge for only 10 minutes then sprayed my hands lightly with PAM and rolling the balls was a no mess cinch! Enjoy!! These are surely going on my favorites list!

Awesome! Don't let this recipe intimidate you! It's easier than people say. I let mine raise for 30 minutes but they still came out a little too dense..but still delicious! Let raise longer than 30 minutes for fluffier dough. Must try this!

Beef Pho

Fantastic authentic pho bo recipe. My husband and I spent a whole month in Vietnam and this tastes perfect. I halved the water amount to 2 gallons. I only used beef neck bones for a nice clear broth. I didn't use the radish. In cheese cloth I used Anise seed, ground cinnamon, ground peppercorns, and a lot more cloves. I about doubled all the spices as I'm used to very aromatic pho. I added the tablespoon of fish sauce and sugar and simmered for the 6 hours. Paper thin sirloin was great! Loaded it with only cilantro and green onions and noodles just like in Hanoi and this dish was delish! Thank you for such a great recipe to play with!

Baked Pineapple

SO GOOD!! I never have even heard of this dish and it was so easy and very rewarding!! Thanks for the tip to mix in some dried cranberries and then top with pecans. I will absolutely be adding this to our Christmas table every year! Note: if taking for potluck or making for large family you need to at least double the recipe.

Grandma's Green Bean Casserole

SO much tastier than the mushroom recipes! I also only measured 3/4 cup sour cream, 1/2 tsp. of salt and only about a cup of cheese. I sauteed a clove and a half of garlic with the onion, butter and flour. I mixed in half of a large can of french fried onions to the beans. I mixed the cheese WITH the beans (not on top). I topped it off with the crackers and more french fried onions. SO GOOD!

Easy Strawberry Lemonade

I also pureed strawberries that equaled a cup worth of liquid. Perfect! We had it with Christmas dinner and I'll be making this year round! My husband especially loves it!
