Kung Pao Chicken

I rarely ever give a 5 stars, but this deserves 10. I am always trying to make chinese food and always fail, this was amazing. I tripled the marinade and quadrupled the sauce. I also cooked the chicken first and then when that had a nice brown to it I added the sauce until it became the consistency I preferred. I also in another pan cooked snow peas, garlic and water chestnuts with some of the sauce and then added the chicken to it because my hubby hates any veggies. I would make this again again and again, definitely was proud of myself for not screwing it up!!

Traditional Mashed Potatoes

You honestly cant screw this up, I use fat free spray butter and fat free half and half, tastes yummy. I have made TONS of different types of mashed taters, with sour cream, cream cheese, etc. and this simpley recipe is so yummy. I also add granulated garlic and some parsley for some color.

Old Fashioned Potato Salad

Everytime I make this it's raved about. Almost every bbq I am requested to make this. I use 6 eggs and 2 eggs I use the whole egg and yolk and then the last 3 I only use the egg whites, lower fat option. I also use more mayo then requested, I use lowfat mayo and just use it to my tasting. I also use celery seed as well as celery salt, I think it gives it great flavor. You cant really screw this recipe up

Artichoke Bruschetta

I have made this several times. I used all lowfat stuff, mayo and parmesan cheese and I used the non marinated artichokes. Still turns out wonderful. I use a TON of garlic and it makes this dish over the top, I also used diced red tomatoes out of the can and it gives it beautiful color and taste. I cut the baguette and spray each slice with Pam and then put under the broiler before putting the topping on. they get a nice crispiness that holds the bruschetta nicely. This is one of those recipes that I always get a request for the recipe. Easy and so tasty

Baked Chicken Nuggets

I have made these several times with a few changes. I put spray butter (non fat) in a dish with garlic and dredge the pieces of chicken in then. I use italian seasoned bread crumbs and panko bread crumbs and lowfat paremsan cheese and put it all in a ziploc bag. I then throw all of the chicken pieces in the ziploc bag and shake until all pieces are covered. Then put on a cookie sheet well covered in PAM, then I spray each piece lightly with Pam and while cooking I turn over once. We like our's crispy so the last 5 minutes I turn up the broiler and take out to our liking. We make with the honey mustard dipping sauce on this site. perfection, they taste they are fried without the fat!

Buffalo Chicken Dip

I used lowfat everything, I used 8oz lowfat cream cheesed and 8 ounces fat free cream cheese. I also make my own homemade Buttermilk Ranch from Hidden Valley, I make it all lowfat and I used that in place (YUMMY) I also used Kraft shredded fat free cheddar cheese, melt's great, cant even tell it's fat free in dips. I also added about a handful of reduced fat blue cheese crumbles, add's that extra zing I thought this was missing. Went soo fast I made more and then the leftovers I gave to my hubby's friend, he was eating it with a fork.

Bacon Wrapped Smokies

So YUMMY, had a hard time keeping them on the plate for everyone. I used a large ziploc bag and threw the brown sugar in there and then cut the bacon into two pieces and shook it up. Wrapped each one with no toothpicks, fold down. I highly recommend using aluminum foil it's much easier to clean up. You and your guests will enjoy these very much!

Gourmet Chicken Pizza

If you like pizza with alot of goodies and tons of flavor then this is your pizza. I think I might have been fine with not having the ranch or barely having any at all. There were so many flavors it didnt need that extra ranch. I used Trader's Joe's pre made crust, so yummy and used all lowfat products, turned out great. If you want something hearty this is your pizza!

Mexican Cream Cheese Rollups

I made this with 4oz of fat free cream cheese 4 oz of lowfat cream cheese. I also used lowfat mayo, no olives and I added a half of a can of green chiles and diced up tons of jalapenos. I also used lowfat whole wheat tortillas. This was a hit, I had to package up a bag for our guests (made way too many for how many people we had coming) And spicey stuff for me being pregnant doesnt mix so I needed to get rid of them.

Creamy Pesto Chicken and Bow Ties

I made this with using fat free spray butter when cooking the chicken. I also replaced the pesto sacue with making my own from the Knorr packet, I use fat free I cant believe it's not butter spray in making it and it turns out yummy. I also use fat free half and half in place of milk. This is by far my favorite dish I think I've made in quite some time. Take in mind I am pregnant so my judgement may be altered, but I know this will be a staple in my house for years to come. I cant wait to have some friends over just to make it. Also it doesnt look to appetizing, but dont let that fool you!!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

My husband and I love pork tenderloin, but this is by far the best recipe! Don't let the preserves fool you, if u don't like them, you will love this! I make my own rub and always have the sauce on the side, almost every time I make it someone leaves with the recipe!

Two Step Creamy Cheesecake

This is soo yummy, I used half of the asked whipped cream and it was still a little to much for my taste. I used Lowfat and fatfree cream cheese combined and fat free whipped topping and you couldnt even tell. I also added a capfull of vanilla. I will definitely be making this again!!

No Bake Peanut Butter Pie

Yummmy!! I used lowfat graham crusts, lowfat cream cheese, fat free cool whip, lowfat peanut butter and instead of confectioner's sugar I use splenda! Sounds gross but not ONE person knew they were eating lowfat when I made it, it was amazing!!

Cheesy Potato Salad

I make this with no sugar and use lowfat mayo, lowfat sourcream and turkey bacon. I then add 2% lowfat cheese throughout and put in oven for about 25 minutes at 350 and it bakes soo yummy!

Jalapeno Popper Spread

I make this for every party we have and it's always the first thing to go! I make it exactly how the recipes states but use all lowfat products. Lowfat mayo, cream cheese and parmesan cheese. I also bake it for about 25 minutes at 350 and it gets a nice crust at the top, sooo goood!
