Mother Earth's Baked Beans

Very good. Recipes like this I usually make the day before cooking them, to meld the flavors (also added 1T. Worcestershire sauce). I put it in a 9x13 pan, & it came to within a 1/2 inch of the top & weighed a ton! I cooked it low & slow for several hours. The only problem I see with this recipe is leftovers. It's going to be very dry & will need plenty of liquid doctoring before reheating.

Johnsonville® Smoked Sausage Casserole

It was fine. I thought it would be a nice change of pace, & it was. A deep baking dish (as pictured) or a 9x9 pan should be used, but I had no choice but to use a 9x13 pan. I simply put all the stuffing on top. If you're in the same boat, avoid the temptation of adding more stuffing, or you'll end up with sausage stuffing, instead of a smoked sausage casserole.

Ham and Cheese Breakfast Quiche

It takes a whole lot of chutzpah to make major changes in a recipe, & then give it only 3 stars! In recipes like this, I always use quality pre-cooked hash brown patties, which eliminates step #3, saving 25 minutes of cooking time & the need for butter.

Ultimate Maple Snickerdoodles

Easy, Speedy Corn Muffins

Quite flavorful. I recommend a brief puree of the creamed corn, but don't overdo it or the volume increases & dilutes the flavor.

Peach Cobbler V

The way I prepared it was only 3.5 stars. But I followed the suggestions of others & increased the flour to 1.5 cups & baking powder to 2 t. I also added 6 oz. of frozen peaches, but the ratio was too much cobbler to fruit. Since I changed it, I can't hold it against the recipe submitter. Next time I'll use 1c flour, cut the butter in half & use an 8x8 pan. I may still add the extra fruit.

Donut Muffins

The end product is essentially the Bisquick French Breakfast Puffs. It was a bit drier than mine, but that was probably due to my brushing on the butter (a first for me) instead of dipping them. Much healthier, but not as moist.

Cornbread Muffins I

Among the best corn muffins I've made. I did cherry pick changes from other reviewers: I cut the sugar to 1/2 cup & added 1/4 cup of sour cream. I used thawed frozen corn with no problem. But my muffins were done at 15m, & my oven is properly calibrated.

Easiest Peanut Butter Fudge

Excellent & very creamy! I followed the suggestions of others & cut the brown sugar to 2c & the powdered sugar to 3c. I upped the peanut butter to a cup as suggested & may try 1 1/4c next time. I saw differing opinions on when to start the 2 minute boiling time so I split the difference & started before it reached a rolling boil. I also added the powdered sugar to the mixture which I had put in my stand mixer. I set it on low speed for a minute or two.

Tiffany's Pumpkin Cupcakes

Easy to make & I liked it, but it definitely needs frosting (I made cream cheese). I added cinnamon but it still lacked the pumpkin punch that I love; I should have heated the pumpkin first. A touch more spice might be in order as well.

Hamburger Hash Browns

This was very bland the first time I reviewed it, even for my simple palate. I've tweaked the recipe, now giving it 4 stars. First, I used pre-cooked hash brown patties which eliminates the flavorless results when baking raw hash browns. No oil, & I added 1.5 oz. of real bacon bits to the ground beef mixture. I also crumbled the hash browns & microwaved them in a bowl. Doing that helped bring it to temp without overcooking the hamburger & gravy. I added a teaspoon of Worcestershire sauce & a tablespoon of minced onions (no onion powder) to the hamburger after it was done. I only had a 2 cup dry brown gravy packet, so I poked a few holes in the hash browns & added 1/4 cup or so to use some of the extra. Much more flavorful!
