Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

This was delicious. The only thing that I would do differently (and I will make this again) would be to reduce the amount of barbecue sauce in order to let the apricot flavor come through a little bit stronger. I would also reduce the amount of glaze by half. I used it to glaze while grilling and also as a sauce for dipping and I still had to much. This was excellent and it would be great for company.

Mexican Sour Cream Rice

This was delicious! I made quite a few changes based on what I had on hand and also based on many of the other reviews. I used frozen corn instead of canned and also added a can of black beans, rinsed and drained, a can of petite diced tomatoes, drained, a can of nacho soup, diced scallions and 2 T chili powder, 1 T ground cumin, 1 t ground coriander and a dash of cayenne pepper and a Mexican blend cheese. Thanks for the wonderful recipe. I will definitely make this again.

Black Bean Hummus

I used 1 whole can of chickpeas, peanut butter and a little sesame oil in place of the tahini, omitted the lemon juice because I forgot and it was delicious. However, it needs more sour cream otherwise it's too firm once refrigerated.

Lemon Garlic Tilapia

This fish was wonderful though I did change it somewhat. I placed the fish atop lemon slices which infused lemon flavor while helping to keep the fish from sticking. I seasoned the fish with lemon juice, old bay seasoning, a smidge of lemon pepper, garlic and butter and toward the end I added fresh chopped flat-leaf parsley. It was delicious though it only took about 20 minutes to be perfectly cooked. Thanks for the great recipe!

Honeyed Pork Chops

These were delicious! The only thing I changed was to double the honey. Next time I will add little or no water to make a thicker sauce and get a better glaze. I used thin chops and they only took about 25 min to bake. Thanks for the terrific and simple recipe!

Zucchini Alfredo

This was delicious but I didn't make it exactly as the recipe stated. I used penne instead of egg noodles. I pureed half the zucchini to create more of a sauce and shredded the rest. I also used half cream cheese and half mascarpone because that's what I had on hand. I added a little lemon pepper, as well. Thanks for the great recipe! I will definitely make this again.

Banana Crumb Muffins

I made these according to the recipe and they were delicious. The recipe made 12 huge muffins, though. Next time I will add some vanilla and I will use 1/2 whole wheat flour and 1/2 brown sugar. Thanks for the great recipe Lisa!

Quinoa Side Dish

This was delicious! I used less butter and reduced fat/sodium chicken broth and I sauteed the garlic and onion before toasting the quinoa. This was perfect and I will definitely make this again. Thanks for the great recipe

Quick Cassoulet

I doubled the recipe because I had a lb. of smoked sausage. I didn't drain the tomatoes and I added some chicken broth and a 1/4 C of red wine. I added a dash of red pepper flakes, chopped bell peppers and I used parsnips instead of carrots because I didn't have any. I simmered it for at least an hour and served over brown rice with a salad and french bread. This was wonderful especially on a cold winter night. Very easy to prepare and I will definitely make again especially because it is made with ingredients that I usually have on hand. Thanks for the great recipe

Roxie's Bran Muffins

These were excellent and will definitely be my go-to recipe. I read the other reviews and incorporated some of those suggestions. I used 1/3 cup fat-free vanilla yogurt for the banana because mine weren't ripe enough. I added 1t. vanilla extract, also. I also added 1/4t. salt and 1/2 t. baking powder and my muffins puffed up nicely. They were a little too sweet so next time I think I'll use 1/4 C. honey and maybe a T. spoon or 2 of brown sugar. I combined all the wet ingrediants with the bran and raisins and seperately mixed the dry before mixing the dry into the wet. Pretty simple recipe but delicious! Thanks for the great recipe!

Super-Delicious Zuppa Toscana

this soup was wonderful...I followed the recipe exactly. The soup was a little greasy even though I drained the sausage on paper towels so maybe next time I'll try it with turkey sausage. It wasn't too spicy at all. I used baby spinach and I would probably substitute kale if I could find it but spinach was good too. The sliced potatoes were beautiful but hard to eat with a spoon so I will cut into smaller pieces next time as well. Thank you for the delicious recipe

Bow Ties with Sausage, Tomatoes and Cream

Excellent recipe. Tastes great and it doesn't get any easier. I used 3/4 lb. of hot italian sausage and omitted the red pepper flakes. I also subbed half & half for the cream and reduced the amount to 3/4 C which was plenty. Thanks for the great recipe. I will definitely make this again

Chicken Paprikash II

This is one of the best recipes I have ever used from this site. I have made it several times and the only changes that I have made is to use olive oil instead of bacon grease, boneless chicken breasts, HUNGARIAN paprika, and I sometimes add diced green peppers if I have them. Sometimes I make spaetzle but if I'm feeling lazy I serve with rice or egg noodles. Delicious, thank you.

Brown Sugar Meatloaf

This is the best meatloaf I have ever had. I used 2 pounds of beef, doubled the glaze, used more ketchup so it wasn't quite as sweet and I put the glaze on the top and the bottom because it was delicious. The ginger is unexpected and wonderful. I used bread crumbs instead of crackers because I didn't have any. Thank you so much for such a great recipe. I will definitely make this again
