Easy Roasted Red Pepper Hummus

I LOVE hummus but I found this variation kind of boring. Maybe it would be better with fresh basil? Thanks for the opportunity to give it a try though.

This was good! I made my own crust and mixed some ranch dressing in with the sour cream as other reviewers suggested. Thanks for the great recipe. I'm sure I'll be making it again.

400 was WAY to high a temp to bake cookies at!!! My first batch burned and didn't spread out at all. I lowered the temp to 350 and the rest turned out perfectly but I was upset to have ruined the first batch.

I used leftover homemade wholeberry cranberry sauce from Thanksgiving that had been pureed in the food processor and left out the lemon juice. These were very good. Thanks Lara.

Chicken Enchiladas II

I made these for our Mexican Christmas and they were pretty good. I used a whole chicken that had been cooked in the crockpot the day before and shredded. I doubled the recipe and used corn tortillas fried in oil for a few seconds. I added black beans and corn to the filling and used 1 can of cream of mushroom and 1 can of fiesta nacho soup. I'm glad I didn't use all cream of mushroom because as it is they were a little bland for my taste. Thanks

Taco Lasagna

We had a Mexican Christmas this year and I assembled this two days in advance adding frozen corn and black beans to the ground beef mixture. I kept everything else the same. It was delicious except the corn tortillas fell apart when it was served. This was probably because I assembled the dish ahead of time though. I will definitely make this again. Thanks Crystal.

Chocolate Crackled Cookies

I was not crazy about these but they were my sister's favorite. I made exactly as written and if I were to make them again I would not roll in powdered sugar before baking. The sugar absorbs the oil from the cookies and they are not pretty. I had to sprinkle them in powdered sugar after. Next time I'll just sift the sugar over after baking. I also wasn't crazy about the crisco and might replace with butter. Thanks.

My favorite Christmas cookie this year! I made exactly as written and the recipe only gave me about 45 cookies but they were fantastic! A nice change from the peanut butter blossoms. Thanks.

Black Bean and Salsa Soup

Soooo GOOD. I doubled the recipe, used dry black beans, homemade chicken stock and added a couple tablespoons of sherry and lime juice and served it with avocado sour cream. I will definitely make this again! Thanks for the great recipe Maryanne!

Eggplant Parmesan II

This recipe is very basic and needs a lot of work. I used 2 large eggplants and that was almost too much. I needed three beaten eggs. I used homemade sauce and fresh mozzarella and topped with fresh basil.

Ricotta Gnocchi

I followed the recipe exactly as written and I was terrified I had done something wrong! Easier to make than I had anticipated. I ended up not being able to cook them the day I made them so I kept them in the refrigerator until the next day. They were a little heavy but I think that could be due to the fact that I didn't cook them right away or to overcooking slightly. Not sure. They were good but not spectacular. Glad I gave them a try though. Thanks

Homemade Tomato Sauce I

I quadrupled this recipe using home-canned tomato puree. I left out the celery and used dried basil, oregano, thyme, marjoram, and crushed rosemary instead of the Italian seasoning. I simmered, covered, for 2 hours and then removed the lid and simmered another hour and it was extremely thick. I added a little sugar to cut the tartness toward the end. Delicious! This will be my go-to sauce from now on. Thanks for the great recipe!

My absolute FAVORITE cucumber salad. We eat this at least once a week during the summer months when cucumbers are plentiful from the garden. I usually add some sliced onion, as well. Thanks for the great recipe!

Cheddar Bay Biscuits

These were delicious but I did make quite a few changes based on the other reviews. I halved the recipe but kept the amount of cheese the same. I also added some garlic powder, dried parsley, and Old Bay to the batter. I also added some Old Bay to the butter mixture and after brushing it on I returned the biscuits to the oven for a few minutes. The only thing I would change for next time would be to increase the amount of cheese even more to 10 oz. Thanks for the great recipe. I will definitely make these again.
