Chicken Tortilla Soup I

This is the best chicken tortilla soup I have ever made. I use shredded chicken and dried beans with reduced sodium fat free chicken broth. I love the inclusion of the hominy, which I would never have thought of! Thanks!

Refried Beans Without the Refry

These were incredible! I won't ever buy canned beans again. The only change I made was to use fat-free reduced sodium chicken broth instead of water, and they turned out amazingly well. I may use black beans in the future, as well. I used the beans in a cream cheese based bean dip and it was heavenly. Thanks!

Exquisite Pizza Sauce

The best pizza sauce recipe I have found. Quick and easy with the perfect blend of sweet, savory, and spicy flavors. The only change I make is to leave out the marjoram because I never seem to have it on hand. Thanks!

Balsamic Grilled Zucchini

Ridiculously delicious and simple. I throw everything in a zip-lock bag and marinate while I prep the rest of dinner before putting these on the grill. Super simple and delicious. I will make these over and over. Thanks.

Zucchini Risotto

I made this as directed except I used shredded zucchini, left over from bread, and I used a half cup of dry white wine to deglaze the pan after toasting the rice. It was very good though not the best risotto I've ever made. It's a great way to use up some of my overly abundant zucchini crop! Thanks.

Chocolate Chip Orange Zucchini Bread

These were really good! The only change I made was to double the orange zest and I also used dark chocolate chips. The only change I would make in the future would be to use orange extract because even doubling the zest didn't give it a very strong orange flavor. Thanks for the wonderful recipe. I will definitely make this again.

Zucchini-Chocolate Chip Muffins

These were excellent! I used half AP and half whole wheat flour, canola oil instead of vegetable, regular sized chocolate chips, and pecans instead of walnuts, all based on what I already had on hand. They were wonderful and they only thing I would change would be to add more chocolate chips. Thanks for the great recipe. I will definitely make these again.

Guinness® Corned Beef

I used a point cut brisket and it took 2 bottles to cover the roast but it turned out very good. The brown sugar made it a little on the sweet side and I prefer the briney taste of traditional corned beef but it was very tender. Thanks for the great recipe

I used about 2.5 lbs potatoes and only 1 leek which was more than enough. I also added 4 or 5 strips of crisply fried and crumbled bacon. Served with corned beef for St. Patty's day. Thanks

I used leeks instead of onion but other than that followed the recipe. I have never made this with cabbage before. I have always used kale which I think I prefer. This was very good too though and went well with corned beef for St Patty's

Corned Beef Potato Pancakes

I used leftover colcannon and left over corned beef from St. Patty's Day and they were delicious. Because I used leftover potatoes I had to add about a 1/4 of flour to stiffen the mixture up. Thanks for the lovely leftover idea!

Fast and Delicious Black Bean Soup

I left out the carrot and used a red bell pepper instead of green. Instead of using canned beans I use dry beans that I cook in advance and freeze. Much less sodium and more economical. The only thing I would change would be to add the ham AFTER pureeing the soup because the ham shreds and gives it a strange stringy texture. Very tasty though. Thanks.

Pork Fried Rice

This was a great way to use up leftovers! I used left over pork and left over brown rice. I added red bell peppers and subbed sugar snap peas for the frozen peas. I also added napa cabbage and added some sriricha at the end. I also used fresh garlic and ginger. Thanks for the great recipe
