Navy Bean Soup I

I made this soup because I had lots of leftover ham, but no ham bone. I used homemade chicken stock instead of water and bouillon. I also used carrots instead of celery. I had about a 1/2 cup of tomato sauce to use up, so I subbed that for the diced tomatoes. I cooked the beans, drained, and rinsed them. I then sauteed the carrots, onion, and garlic, before adding the seasoning and tomato sauce. I then added about 2 C. of diced ham, chicken stock, and the beans. This turned out beautifully, and was even better the second day. It wasn't as good soup made with the ham bone, but a good alternative. Thanks.

Aunt Ro's Baked Beans

I use whatever canned beans I have on hand, and instead of canned baked beans with bacon, I fry up a few slices of bacon, crumble it, and add it to the top of the beans before baking. Thanks for the great recipe.

Simple Basil Butter

I used one clove of garlic, no sugar, and I didn't use the food processor, just finely chopped everything and mixed well. Wrapped in plastic wrap and refrigerated until ready for use. Served on steaks, and homemade garlic bread. Thanks!

Savory Zucchini Muffins

These were a lot of effort, but a nice change from sweet zucchini bread recipes. I used all white flour because I was out of whole wheat. I left out the red pepper and doubled the sun-dried tomato. I didn't puree the ingredients, just finely minced. I also put the parmesan into the batter rather than on top. Very adaptable, and the best savory zucchini bread recipe I've tried. Thanks!

Sausage Spinach Bake

This was very good. I used 1 lb of sausage and 1 lb of spinach, only 3/4 C half and half. Next time I would probably use 4 or 5 eggs. Easy and tasty. Thanks.

Sun-Dried Tomato Dip

This was very good, though I used about 3/4 C of tomatoes when all was said and done. I would probably omit the mayo next time and just use sour cream. It was definitely better the second day, as well. Thanks for the great recipe.

Easy Sugar Cookies

These cookies are wonderful, even though I am not a huge fan of sugar cookies. They are soft and moist rather than hard and crumbly like a lot of sugar cookie recipes. I make these for Christmas every year. Thanks for the great recipe.

Cha Cha's White Chicken Chili

This was very good. I made as directed except I added a little chili powder and left out the cayenne since it was hot enough for me without it. I also used a fourth can of white beans, which I pureed to thicken the soup. I also added some instant potato flakes to further thicken it to make it more of a chili-like consistency. Thanks. I will definitely make this again.

Marie's Easy Slow Cooker Pot Roast

Delicious and easy. I usually make my roasts in the oven, but this was good, too. I added bay leaf, seasoned the roast before browning, and thickened the juice before serving. Thanks for the great recipe!

Ham and Cheese Bowties

Baba Ghanoush

This is delicious. I used the juice of 1 lemon, 3 T tahini, and 3 cloves of garlic. I added about 1/2 teaspoon of smoked paprika to add to the smoky flavor and garnished with chopped flat leaf parsley on top. Thanks!

Grilled Salmon I

Easy Three Cheese Manicotti

So, it definitely wasn't Three Cheese Manicotti after I added the ground Italian sausage, but it was still delicious! I also used homemade tomato basil sauce because I prefer it to the store bought.

Old Fashioned Macaroni Salad

This is a great recipe, but I always make it with a few changes. I always omit the celery because I don't like it. I also always add about a cup of frozen peas and about 2 T Italian salad dressing to give it a little zip. Thanks.

Cold Tuna Macaroni Salad

I changed this recipe quite a bit to suit my taste, but I love it's inclusion of the Italian dressing. I omit the tomatoes and celery, and I add about 1 cup of frozen peas. Thanks. I love it.
