Guinness® Corned Beef

I used a point cut brisket and it took 2 bottles to cover the roast but it turned out very good. The brown sugar made it a little on the sweet side and I prefer the briney taste of traditional corned beef but it was very tender. Thanks for the great recipe

Colcannon

I used about 2.5 lbs potatoes and only 1 leek which was more than enough. I also added 4 or 5 strips of crisply fried and crumbled bacon. Served with corned beef for St. Patty's day. Thanks

I used leeks instead of onion but other than that followed the recipe. I have never made this with cabbage before. I have always used kale which I think I prefer. This was very good too though and went well with corned beef for St Patty's

Corned Beef Potato Pancakes

I used leftover colcannon and left over corned beef from St. Patty's Day and they were delicious. Because I used leftover potatoes I had to add about a 1/4 of flour to stiffen the mixture up. Thanks for the lovely leftover idea!

Fast and Delicious Black Bean Soup

I left out the carrot and used a red bell pepper instead of green. Instead of using canned beans I use dry beans that I cook in advance and freeze. Much less sodium and more economical. The only thing I would change would be to add the ham AFTER pureeing the soup because the ham shreds and gives it a strange stringy texture. Very tasty though. Thanks.

Pork Fried Rice

This was a great way to use up leftovers! I used left over pork and left over brown rice. I added red bell peppers and subbed sugar snap peas for the frozen peas. I also added napa cabbage and added some sriricha at the end. I also used fresh garlic and ginger. Thanks for the great recipe

400 was WAY to high a temp to bake cookies at!!! My first batch burned and didn't spread out at all. I lowered the temp to 350 and the rest turned out perfectly but I was upset to have ruined the first batch.

Chicken Enchiladas II

I made these for our Mexican Christmas and they were pretty good. I used a whole chicken that had been cooked in the crockpot the day before and shredded. I doubled the recipe and used corn tortillas fried in oil for a few seconds. I added black beans and corn to the filling and used 1 can of cream of mushroom and 1 can of fiesta nacho soup. I'm glad I didn't use all cream of mushroom because as it is they were a little bland for my taste. Thanks

Taco Lasagna

We had a Mexican Christmas this year and I assembled this two days in advance adding frozen corn and black beans to the ground beef mixture. I kept everything else the same. It was delicious except the corn tortillas fell apart when it was served. This was probably because I assembled the dish ahead of time though. I will definitely make this again. Thanks Crystal.

Chocolate Crackled Cookies

I was not crazy about these but they were my sister's favorite. I made exactly as written and if I were to make them again I would not roll in powdered sugar before baking. The sugar absorbs the oil from the cookies and they are not pretty. I had to sprinkle them in powdered sugar after. Next time I'll just sift the sugar over after baking. I also wasn't crazy about the crisco and might replace with butter. Thanks.

Black Bean and Salsa Soup

Soooo GOOD. I doubled the recipe, used dry black beans, homemade chicken stock and added a couple tablespoons of sherry and lime juice and served it with avocado sour cream. I will definitely make this again! Thanks for the great recipe Maryanne!
